Mince pies and sausage rolls

I have a lovely Nigella pastry recipe I use for mince pies every year, but it takes me an absolute age to make just 12 and the minute I do they are all hoovered up by my greedy family.

This year we have a super busy time of it so I’m wondering about making them ahead and freezing them. How do you do this? Do you cook them first, or freeze them raw? If raw, do you defrost them before cooking? If cooked, do you defrost at room temp or warm them in oven? If so for how long? Are they as nice once they’ve been frozen?

I’d like to do the same with some sausage rolls. I’ve not made sausage rolls for years - should I buy in puff or make my own pastry? Recipes and ideas for sausage rolls welcomed, plus how to freeze as per my mince pie questions.

I do Delia’s sausage rolls every year and freeze my mince pies. Bake it all, cool and freeze. I just pop them in the oven from frozen when we want to eat them. Stops them being hoovered in one go. And I never remember to lift anything out to defrost anyway.

Oh and yes they taste fine. 20 mins usually does them.

Thank you! Had a look at the Delia video on how to make flaky pastry sausage rolls and looks relatively easy.

Just need to find a free day to do it now!

Love Delia's sausage rolls. At this time of year I use ready rolled puff pastry to save time. Half bake, then freeze. Same with mince pies. Use ready made puff/short and own mincemeat, then freeze as above.

It’s such an easy pastry to make. Make some extra to have before you freeze them! Just to test. Smile
