sounds like they're great for meat eaters, but other than quick-soaking and boiling beans, will I get much use out of one?

I'm not vegetarian but use my instant pot for quite a lot of vegetarian recipes. Mainly

  • beans, I cook big batches of beans and then freeze
  • dhaals and vegetarian curries (most Indian households have more than one pressure cooker and they're great for Indian food)
  • soups
  • not tried yet but planning on risotto soon
  • rice pudding a lot, DC love it and so much easier than in the oven
  • custard and custard base for ice cream
  • jams.

It's not an everyday appliance but I'd say I use it a couple of times a month.

is it possible to make anything other than very liquidy food at all?

Yes, it mostly good for 'wet' food. The only things I make in it that are 'dry' are quite specialised Indian recipes that most people wouldn't be interested in.

I use mine to cook Seville oranges whole for my marmalade recipe. Takes 10 minutes, usually takes 2 hours +.

Cheesecake is great too.
