Confused about meat content of burgers

I really like Morrisons burgers. They have ones at £1.49 for 4 and it says 84%meat, but ones twice the price are only 62% meat. Is it the quality of the meat I'm paying for even though a lesser percentage.
Or should I just make my own with mince from the butchers?

make your own! FAAAAAAAR tastier and healthier

PinkTulips · 13/04/2007 17:57

you can make loads up in one go and freeze them

Do you have a recipe that you use?

i dice an onion and fry it til golden and soft, then leave it to cool.

when it's cool i add it to the mince along with some herbs and spices (those depend on my mood, anything goes really) along with an egg yolk

then i get my hands in there and give it a good mash round, then form the burgers. (or meatballs, or inside out cheese burgers)

i often use lamb mince too as it's far nicer.

frying the onion is a load of faffing though. I put haldf an onion and a couple of slices of bread in the food processor, whizz, and then add mince (about half a pound). then add egg etc.

PinkTulips · 13/04/2007 20:47

no food processor and i tried adding finely dice raw onion once and it fdidn't quite cook.

i balance out the faffing by cheating and using oven chip

There are plenty of burgers which are 99% meat or even 100%, but as Pink Tulips says home-made is often a better bet.

Nigel Slater's book 'Real Fast Food' has a number of ideas re burgers.

iirc, I've made burgers with pork mince (I think it may be a recipe which cod posted??)

Cheese surprise burger: make a well in the home made burger with your thumb, then stick cheese in it, then close the hole.

if you want your onion really fine without frying, try grating them - doesn't have to be really fine grating. i love sage and onion pork burgers. add an egg to 1 lb pork mince. instead of bread, i add dried polenta.
