Stir fry on an induction hob

Is it doable?
Or should I get half induction, half gas so that I can still rattle my wok while stir frying?
TIA

I have induction and a gas wok ring. Rattling your pan will scratch the glass - mind you my glass is a mess - cracked and scratched, mostly caused by the dcs who aren't allowed near the gas!

Have you ever tried stir frying on an induction? Keeping the pan still and just moving the food by spatula etc? My imagination sung working very well and I can't decide if I'd hate it or not.

It's nigh on impossible.

If you can please do get the combo else I'd just advise getting it fully gas?

Induction jobs scratch like demons and look aged really fast. I'll never get another one again if poss.

I have an induction hob and have no problem with stir-frying. I did, however, drop a frying pan from a ~5cm height and cracked the glass.

We do fry on the induction, it works just fine to stir the food but I have never done a stir fry because the wok is not suitable for induction.

I'm happy with my choice I got an induction because it was a safer way for the kids to cook - but glass is fragile - pans are heavy and it is showing quite a few signs of wear and tear - I'll replace it when the dcs have learned not to smash pans down on it or use it as a work surface.

thanks for all the replies. We stir fry at least once a week so maybe I should go for half and half.
DS, who doesn't cook much but is VERY heavy handed when he does cook, can then just continue to use the gas ring.

I think you can get woks with flat bottoms for induction jobs?

mckenzie · 01/10/2017 17:02

Yes but you can't actually Move the wok around as it will scratch the surface of the induction hob. Apparently you have to hold the wok still and just move the food.
But I quite like rattling my wok :)

This is why I like gas Smile

Rattling food is part of the ritual! I think inductions are a bit soulless - but they were a necessity - when we replace our current version I will reconsider gas - from a cooking perspective it's hard to beat.
