What is matzo flour?

I have seen matzo flour in a couple of recipes and would like to know what it is and where you can buy it. It seems to be used as a coating - is it like Ruskoline? Thanks.

It is afaik ground up matzo crackers which are traditional Jewish unleaved bread crackers. I could be wrong though. I have only seen it in Selfridges food hall or maybe even Waitrose but it is widely available in the US. Mind you some big Tescos have quite good Kosher food sections so they may be worth a look.

I know and I've seen it in a couple of recipes on mumsnet as well. Asked in Morrisons yesterday but they didn't seem to know what it was either. I am guessing it is a specialist thing.

It's called 'Matzo Meal'. Made by a company called Rakusens - they also make the big square matzo's, and they are basically the matzo's but finely ground. You can get it in Tesco, Sainsbury's Waitrose (don't know about Asda). Usually in the 'kosher' section in the aisles which contain 'ethnic' type foods. It performs the same function as breadcrumbs but has a different texture, not quite crispy, but somehow different to using breadcrumbs. You can buy either 'fine' or 'medium'. I use it when I make fishcakes to coat the outside - scrummy. Some fish and chip shops in NW London use matzo meal as a coating instead of batter if you ask them (I think, maybe, less fattening?). Anyway, breadcrumbs are fine so don't worry!

there will be a lot of it about at the mo as it is passover.....i made porridge with it ! it is excellent, as karensara says, as a coating for fish, also for chicken goujons...

annabel karmel is jewish, IIRC, hence her using it....

it is very versatile, and keeps for ages, so better than faffing with breadcrumbs sometimes !

Fine matzoh meal is a bit like flour, medium matzoh meal is more like breadcrumbs. As others hav s have said - good for coating things like chicken or fish.
