Does anyone have any recipes? Really want to try and make it, it always looks so nice.
Or is it one of those things that looks nice, but is awful?

I've never made it from scratch but my dcs love shop bought gnocchi with green pesto.

I love www.bbcgoodfood.com/recipes/461631/spinach-and-ricotta-gnocchi although I've never tried making a plain version

PurpleDaisies · 25/09/2017 21:55

I've also never made if from scratch but really enjoy shop bought. I often make it with a spicy tomato sauce, olives, roasted veg for a quick dinner.

I've not made normal plain gnocchi but I occasionally make this sweet potato and parsnip gnocchi. To be honest it is a bit too sweet for my liking but I'm in the minority with that opinion!

LoniceraJaponica · 25/09/2017 22:54

I saw Jamie Oliver making it on TV tonight. I'm sure the recipe will be available online.

I buy it and fry it before covering it in tomato sauce. It is delicious.

I don't personally like the shop bought stuff. It's too dense. Good gnocchi should melt in your mouth. I watched an elderly italian lady make it once and she made it into lots of small egg shaped balls (half the size of the stuff you see in shops). She then froze it on lots of trays. She cooked it the next day (it's ready when it starts to float so get them out as they pop up). Served with a homemade tomato sauce it was the best thing I ever tasted!

Life is too short!
Waitrose used to do tricolour mini gnocchi, it was lush (they might still, but I moved away from civilization)
I made beetroot gnocchi once, it looked like baby guts.

Once you've eaten fresh, shop bought gnocchi isn't worth eating, homemade - light fluffy pillows - shop bought hard little nuggets. We don't have it often but it's something the kids enjoy making on a rainy winter's day, with a very rich tomato sauce with spicy sausages, safe and red wine - it's a big hug on a plate!

LoniceraJaponica · 26/09/2017 06:06

Last time I tried making potato gnocchi they disintegrated when I cooked them. Inspired by this thread and Jamie Oliver I will have another go.

Orangeplastic · 26/09/2017 07:10

Lonicera what recipe were you using? The kids do the potato one - lay the gnocchi on polenta to stop it sticking, cook it in batches and add as little flour as possible to get to a pliable soft dough. I used to make the spinach and ricotta version - which is quite sticky and hard to work with but the results are good.

LoniceraJaponica · 26/09/2017 07:29

I don't remember as it was a long time ago. I will definitely give it another go though.

buckbeak · 26/09/2017 09:16

Ohh thank you so much for all the replies, I'm going to have a go at making this tomorrow, fingers crossed they turn out ok.

I found a receipe for cheeseburger gnocchi on Pinterest. It’s mince tomatoes cream and some spices with it. Really nice.

MagicFajita · 26/09/2017 14:11

Cheeseburger gnocchi? I feel like I need that in my life. Sounds like the ultimate comfort food.

buckbeak · 26/09/2017 21:11

The cheeseburger one does sound amazing!!! Got the ingredients to try it tomorrow.

Fry them and they make little mini roast potatoes

Melassa · 26/09/2017 21:28

i've made them from scratch in the past and was scraping dried potato from my worktop corners for weeks afterwards. Yet I have a friend who rustles some up in 10 mins every Sunday morning and leaves them out to dry while she pops out for a pre-prandial aperitivo.

Best tip for cooking shop bought ones, cook them directly in the sauce. I make a buttery tomato and rosemary sauce using copious amounts of olive oil, a small slab of butter, a bottle of passata, chopped rosemary, all in a wide based pan, chuck the gnocchi in when warm and bubbling, add half the passata bottle quantity if cold water, cover and cook on a low heat, remembering to stir occasionally. Depending on how big and what type of gnocchi you get, it's ready in max 10 mins, once the sauce has reduced down a bit.

This way you avoid gloopy watery overlooked gnocchi.

You can do the same with 4 cheeses, which is essentially a thin bechamel (to cook the gnocchi), with 4 different cheeses melted in. One of the cheeses MUST be Gorgonzola Smile

Ive made sweet potato gnocchi before and it was really simple, and a little healthier than using normal potato. Here is the recipe I use.
