Nigella' Madeira cake.

Although not a loaf cake, the best thing you can put into a loaf tin is brownie mix - you need 2 tins for 1 regular traybake style tin. It means every piece is a) pleasingly deep, b) fabulously gooey in the middle, c) an edge piece.

Boiled fruit cake......never fails to taste delicious......200g butter/marg, cup of milk, cup of sugar, cup of dried fruit. Put all in a saucepan and heat until butter melted. Take off heat. Add two eggs and two cups of self raising flour. Mix well. Pour into lined loaf tin and bake for 40-50 minutes at 140 degrees. Cup size I use in a large tea cup and use the same cup for all measurements. Enjoy

I do Nigella's "everyday brownies" from the Kitchen book. I add a splash of coffee liqueur as well as vanilla, and chuck in some white chocolate chips for good measure.

Use those disposable loaf tin liners to save mucking around getting them out. Cook at 180 fan for about 15 minutes (definitely no more than 20). They will look almost raw in the middle and the centre will sink down as they cool. Let them cool in the tin for quite a while. For a really dense brownie, once they are cold and out of the tin (but before you cut them!) wrap the whole loaf in greaseproof paper and cling film and pop in the fridge overnight. Cut up the next morning and the centre should be almost like fudge.
