If I roast a chicken...

On a Sunday night then cool, shred and refrigerate. How many days will it be ok to eat?

DS likes chicken wraps in his school lunch and I'm trying to move away from so much processed meat. Felt irrationally guilty putting Tesco chicken slices in his lunch this morn when reading the ingredients Confused

Roast shredded chicken would definitely taste better as well as providing me with a weekly dose of chicken skin to scoff before anyone notices

Personally, I'd say Tuesday or Wednesday if it smells ok. You could always freeze them in small portions and take out the night before.

Well I've just eaten a chicken leg off a chicken we had on Friday so I will let you know how I feel later! I wouldn't have given it to DS though, although I would have for yesterday if I had remembered it was there. I think 3 days is the limit for kids at least.

I'd say 3 days, though the last one I did that with was gone by then.

Even chicken breasts work out cheaper than precooked chicken and take no time at all to cook.

We roast a chicken on Sunday and use it till Tuesday night. I might have crossed my fingers and used it on Wednesday and clearly lived to tell the tale.

Not the question you asked, but it'll stay moister (more moist? Is moister a word) if you leave it on the carcass and take off as you need it, rather than shredding in one go.

I'm obviously a high risk person. I'd just smell it, and have eaten five day old cooked and refrigerated chicken before.

I would put an ice pack in his lunchbox to keep it cool though.

I find that it's easier to take off the carcass while it's still warm. It stays moist enough in a lidded container. It's possible to dribble over a spoonfl of the juices to add to that before chilling.

Roasted a chicken for Saturday lunchtime and had some of leftovers in a sarnie for my lunch today, absolutely fine, I'd say another day would still be ok too

We use leftover roasts til Thursday. No one's been ill yet :o

I've found that boiling a chicken makes it much easier to strip the meat off. It sounds like it would be bland but I put carrots, onion, herbs etc in the water and the chicken has a good flavour, plus there is stock for soup.

I also do the same with gammon joints when the kids ask for ham plus I'm always more relaxed about how long to keep pork over chicken!

I freeze tiny single portions of roast chicken specifically for school lunches and the odd time I want a chicken sandwich myself. I wrap the chicken in greaseproof paper parcels and freeze. It's so handy to take out one parcel at a time and it defrosts quite quickly.

Also handy for quick toddler dinners with some potatoes and brocoli in our house.

It's a bit of an effort to do it all but worth it, you save a lot of money and it tastes nice.
