Lunch ideas. Help me please!

I am trying to write a menu plan for Autumn. I have sorted out 7 breakfasts and 7 dinners. I am stuck with lunch ideas. Can you help me please?

DD2 is allergic to dairy, eggs, soya, nuts, legumes, bananas, avocados, strawberries, asparagus, coconut oil and raw tomatoes. I need to avoid these.

DH and DD1 do not eat mushrooms.

I am looking for seasonal ideas that don't take a long prep time that we can all eat.

So far I have:

Monday: nothing
Tuesday: home made carrot soup
Wednesday: home made tuna croquettes
Thursday: home made pumpkin soup
Friday: picnic style mini sausages, carrots, pears
Saturday: Brie, cranberry and turkey toasties
Sunday: nothing

I have Violife cheese replacement, oat milk and Pure sunflower spread.

Any ideas for Monday (packed) or Sunday (home)?

I think that I would batch cook stuff and freeze lunches to minimise preparation time.

Pasta, rice and cous cous are all quite quick to cook. Serve with veg/chili sauce (cooked in advanced then defrosted.)

I do a lot of batch cooking for dinners. I cannot face anymore, tbh. We are having Spag Bol as a dinner. I am trying to avoid anymore pasta type things. We always end up there and it's a little wearing!

Came across a Topped Tattie wedges recipe in an Ella's kitchen cookbook. I could top with smoked salmon for DD2 as she really loves it. Sunday sorted.

One to go.

maybe a kind of ploughmans? French bread, apple, pickled onions, pate or ham, Branson pickle.

stargirl1701 · 18/09/2017 18:01

Oooh! I like that. Thank you!

quesadillas, wraps, roasted veg cous cous or a good old fashioned sandwich!

secondhoneymoon · 18/09/2017 19:42

If on a day you are having pasta for dinner, you could do baked potatoes for lunch?

mowgeli · 18/09/2017 19:56

This must be a joke ...

Calphurnia · 18/09/2017 19:59

Savoury rice?

Boiled rice, flavoured oil, any veggies that are liked. Maybe add some shredded chicken or ham or seafood for protein

stargirl1701 · 18/09/2017 20:03

No joke. Why would it be?

Thanks for the suggestions.

I really want to say a pack of m&s chicken pieces with salad and beetroot balls...followed by a huge fruit salad with agave syrup. But I won't 😀

 @Needalifeoverhaul Grin

Sorry I saw something in a shitty newspaper today about some lady bragging about her boring lunch and good body.

Sunday could be a risotto made from scratch or you could make chicken soup from scratch.

Instead of trying to find replacements I always encourage people to just not eat what they are allergic or intolerant to.

Are the kids at home during the day?

stargirl1701 · 18/09/2017 20:13

No. I am just lacking ideas for DD2 with her 11 food allergies and restricted growth because of her limited diet. The dietitian has been less than helpful. Everything 'ready prepared' has caused a reaction. I'm having to cook everything from scratch and I am sinking, tbh.

The Ploughman's is easy prepped and I can replace the normal cheese with Violife. MIL makes a great apple chutney so it's perfect.

How about home made pizza so everyone gets to choose their own topping and the tomato base sauce is made of cooked tomatoes not raw. You don't need to have cheese on a pizza so could easily avoid dairy.

Would they eat couscous salad or quinoa salad? Minestrone soup? Chicken kebabs are quick. Baked potatoes with various toppings. Hot dogs if you can find bread with no soya in. Or sausages without soya for that matter.

Sleephead1 · 19/09/2017 08:46

Sounds really hard op and lots of what i would suggest wouldnt work. Sorry also dont much about replacements. We sometimes do a puff pastry sheet with tomato sauce, spinach and cheese could this work with the replacement cheese ? Also my lb loves brocolli tots brocolli and cheese eggs and breadcrumbs in oven do you have a egg replacement for cooking? You can make with most veg What about roasted seasonal veg in wraps, Or roasted veg with cous- cous, quick veg stir fry , what about cooking a chicken for tea then using some for lunch for sandwiches and wraps, what about croissants with fillings warmed in oven,

Pastry is usually a problem. Sainsbury's used to have an egg/dairy/soya free option but it disappeared last year.

Bread is a PITA. Soya flour has been added to nearly every single loaf/roll/bagel/wrap. We were using Aldi's bagels until last year but then they added soya too.

Lunches are always a problem. Sorted for the next 3 months. One solution has been finding 7 of each meal and not deviating until the following season.

I have a chart tracking what can be eaten and what WILL be eaten!

I made a gorgeous and quick lentil and spinach Dahl for lunch today and had it with wholemeal flatbreads - delicious and felt very virtuous after scoffing a curry last night I used a recipe by @thekitchn

stargirl1701 · 19/09/2017 21:30

All beans and pulses are out as she is allergic to legumes.

I miss lentil soup!
