Victoria sponge or Madeira?

Doing birthday cake for DS this weekend.

Wanting to do a 12" square and cover it with white, then green fondant. I'm sticking some little toys on top as I have no talent or inclination for fondant figures!

So, I think I need a Madeira cake rather than vic sponge so it doesn't sink in the middle?

Does anyone have a recipe for this size cake please?

And how much fondant will I need to cover it?

Thanks

Try this recipe from an old thread in "Food - Recipes" Madeira

I generally use this site for that sort of thing: lindyscakes.co.uk/2009/12/17/baking-the-perfect-madeira-cake/

I use a Maisie fantasie recipe for all my cakes (and I make 3 or 4 a month)

For a 12" square you need:

13 eggs
700g self raising flour
700g butter or baking spread
700g sugar (I use granulated)
A good splash of milk
Tbsp vanilla

It's in all in one mix so you can just stick it all in a bowl and beat with a mixer until smooth. Split between 2 greased and lined tins and bake at 170 for at least an hour, until a wooden skewer comes out clean. Leave to go completely cold before turning out.
