please.
I am supposed to be cooking at work this afternoon with a lady i help to support,we were going to make Tiffin but i have decided not to at the last minute as the other service users would find it too chewy.So i need recipes for something nice and easy to make and Eastery.
Help is there such a recipe?

Sorry yes something sweet but not krispie cakes or anything similar as they are at risk of choking.

Raspberry Sherbert

This easy sherbert is great served with the bunny cookies (see below).
You will need: ·
1 bag (12 ounces) frozen dry-pack raspberries, thawed. ·
1 cup low-fat buttermilk ·
2/3 cup sugar

How to Make Your Raspberry Sherbert
Combine raspberries, buttermilk and sugar in blender. Whirl until smooth. Strain through sieve to remove seeds. Freeze in ice-cream maker according to manufacturer's directions. To freeze by hand, place puree in 13 x 9 x 2-inch baking dish. Freeze. Scrape into food processor. Whirl, scraping down side of work bowl as needed, until smooth. Serve immediately. Garnish with a sprig of mint and a few fresh raspberries if desired (Optional).

Crush chocolate digestives, mix with melted butter, press into tin base and chill.

Mix good cocoa powder/melted cocoa with marscapone cheese, sweeten to taste. Pour into tin over biscuit base, chill until firm.

Voila!

Easter Trifle
Serves 6

Description/Notes:

This delicious trifle full of fruits and liqueur serves six although it's almost too good to share

Ingredients:

15 oz. (425g) can black cherries, drained and pitted

one and a quarter pints (750 ml) fresh milk

7 fl. oz. double cream, whipped

4 tbsp. cherry brandy

4 tbsp black cherry jam

5 oz. (150g) Madeira cake, cut into 8 slices

1 chocolate flake, crumbled

3 tbsp. (45 ml) custard powder

1 oz. (25g) caster sugar

walnut halves and mini Easter eggs to decorate

Cooking Instructions:

Spread 4 slices of the Madeira cake with jam then sandwich together wit the remaining slices

cut into cubes and place in a trifle dish

Sprinkle with the cherry brandy

Top with chocolate flake and cherries

Mix the custard powder with the sugar and a little milk

Heat remaining milk until it boils then stir in the custard powder and cook until it thickens, stirring continuously

Leave the custard to cool then pour gently over the trifle

Top with the cream then decorate with walnut halves and mini Easter eggs

You could obviously leave out the liquer

Cooking equipment is very basic.
Mini simnell cakes sound good as well.

Make a big square sponge at home... take in apricot jam, marzipan and decorations to work; cut into individual cakes, cover with jam and marzipan and decorate!

Marble Chocolate

3oog Plain Chocolate
300g White Chocolate
100g Smooth Peanut Butter

Melt chocolate separetly

leave to cool for a few mins

Mix peanut butter into white chocolate.. mix until smooth

Line a tin with grease proof paper etc

Spoon (dolup) white chocolate in, then dark etc, so dolups alternate..

Get a skewer and mark lines in to make a marble pattern.

Leave to set for 2 hrs - or put in fridge! (much quicker)

Total play it by ear, pelvic... crush about half a packet of choccie digestives, melt, say, a quarter of packet of butter and mix in the butter slowly until it all clumps together but isn't too wet. 2 pots of marscarpone should be enough for the filling.

1 pot of marscapone and one 200g bar plain chocolate (or half plain, half milk) melted together and poured over the base. Maybe 2 of each if you need more. Sets nicely in the fridge.
