Oversized courgettes

Hello,

I have lots of overgrown courgettes/marrows. Can anyone suggest what I could do with them?

Cut into chunks and roast them with olive oil, garlic and herbs. Do some peppers and mushrooms with them. Make into a sauce with passata and tomato puree. Bag up and freeze and you will have tasty pasta dishes in the winter months.

Cut them up and put them along other vegetables in savoury muffins.

Also good for making vegetable soup. Add to chopped bacon, onions, lentils and carrots. Add a stock cube and cook slowly. You dont need to add much water.

Courgettes, slice long and thin, rub will th garlic and griddle.
Oh turn into ratatouille.

Make into soup with peas, potato and mint. Add Parmesan at the end of cooking, lovely and quick to make.

Grate and make into a quick soup with stock, onion, and soup pasta.

Slice into thick slices, dunk in egg then breadcrumbs and fry till golden, serve as a first course.

Make into fritters with flour and egg, spiced if liked, a bit like onion barjie.

Grate and stir fry briefly with some garlic for a quick vegetable good with fish or chicken.

For the larger size, scoop ot the seeds, stuff with mince or rice and tomatoes and bake.

I made a veg curry with some and topped with a boiled egg.
Also pickled some and plan on making a chutney.

I give a lot away to friends
but plan to roast an freeze a load for winter

Cut them into rings, remove the seeds, boil for a couple of minutes till soft and fill with a spicy mince or vege mix and serve with boiled rice. OK it's a bit retro but quite tasty.
