Im making jam but forgot to weigh my plums before I boiled them, how will I know how much sugar to put in? Hmm

Put new pan on scales - decant boiled plums into new pan - see what they weigh and add sugar accordingly

I put the same volume of sugar to whatever I am making. Never weight anything. Once they are boiled down, I dip a knife into the pan and look at the depth of the liquid, and make it to to twice that with sugar.

Could I also ask about equipment. I already have 3 glass jars with screw lids from a spice mill for my food. Do I need those wax discs for a seal before I put on lids.

You don't really no...I never have. If you want to you could make greaseproof paper discs but unless you are presenting in a show, you don't need any wax discs at all.

Don't buy jars, they are incredibly expensive. Buy cheapest jarred product at a supermarket.......much cheaper (I know, it sounds crazy). Tesco Everyday Value Marmalade 33p.

Good idea but hate marmalade. Have found 1 jar and may use up other jam today for tarts or decant. Can you freeze jam tarts?

Lemon Curd at Tesco is 55p. You could even throw the Marmalade away, although chucking perfectly good food away is a no-no to me, others may not worry. Aldi/Lidl may be cheaper.

I would mix blackberries with apple then strain and make a jelly ( equal amount of sugar to juice) as
A) blackberry needs a ton of pectin to set
B) blackberry seeds go rock hard
I wouldn't use the funnel incase it melts. Pour into a jug and use that.
Use the biggest pan you have if you don't have a preserving pan as the boiling sugar will rise up the pan a long way.

It worked fine and I bought metal funnel, I was complemented on it by my family. I made scones to go with the jam

I made blackberry jelly the other day, blackberries, lemon juice from a bottle and granulated sugar and it turned out fine.

I buy my jam jars from Wilko. Twelve 190mls, perfect size for gifts, for £5. Twelve at 300mls, £6.

A jam funnel is a great thing to have in any kitchen, not just for jam – for decanting rice/beans into jars, transferring hot soup to thermos flask, leftovers into fridge containers etc.
