Chilli glut

Coming out of every orrifice chez wig. I am freezing, drying, chutneying, making chilli chocolate and candied chillis. I am giving them to anyone who even vaguely passes by but still have loads (and really hot ones at that which is a problem as you can only cook with minimal amounts at a time). Anyone have any ideas - no meat but as unusual as you like

Hot sauce. Put them in a jar with brine (30g salt per litre of water) and let them ferment for a few weeks, then blend.

Kimchi?

Chilli jam. Amazing stuff.
I make enough to see me through for months and also give as Christmas presents as my friends and family are addicted to the stuff!

I second the chilli jam. I make this recipe, it's lovely.: goodfood.uktv.co.uk/recipe/tomato-and-chilli-jam/

Pepper wine? Bung in a bottle of dry sherry and use for Carribbean dishes.
Hot pepper sauce?
Chili vodka?

If you make chili jam, hold your breath when stirring. Boiling sugar and chillies is like napalm if you inhale!

Pickled chillis. They look beautiful in a kilner jar, make great presents, and best of all taste wonderful!

@PhyllisWig

Any tips?
