Cooking on holiday

I need some ideas, hoping people here can help. We leave next week on holiday - we are backpacking/interrailing through Europe for 3 weeks. We'll be able to self cater everywhere we are staying, and will need to in order to keep to budget!
We'll be moving on every few days though so can't build up stocks of food. I need to buy enough for one or two meals at a time maximum. Last time we did this kind of trip, we ate grilled meat/potatoes/salad or sausage pasta A LOT.
This time, I'm wondering if there's anything I can pack and take with me that will give us more variety. It will also need to be light. I'm thinking Mexican spice mixes or curry paste? Does anywhere sell pesto in a vacuum pack rather than a glass jar?!

Does anyone have any clever ideas?

Oh, there's four of us - 2 adults, 2 kids aged 8 and 5 who eat most things apart from anything easy like baked beans or fish fingers!

You can buy sachets of tuna rather than tins and I'm pretty sure I've seen pesto in squeezy bottles as well as glass jars...surely part of the fun though is investigating what you can get in local shops?

And yes, absolutely, we'll definitely be investigating local shops, it would just be good to have some options up my sleeve too.

How about the Schwartz type flavour mixes in packets for 'creamy chicken' or 'mushroom stroganoff' etc?? Good way to mix it up a bit.
