Practicalities of a cooked breakfast for one

Got elderly family member coming to stay soon who likes to have cooked breakfast in the morning. No one else really eats cooked breakfast.
How can I make this work?
Obviously eggs are easy and last ages.
Tinned beans/ tomatoes he can have half a tin each day-rest I'll put in fridge in plastic container until the next day.
I'm a bit stumped with sausages and bacon. We won't be eating at home rest of days he's here so can't use up meat in day. I normally use up opened packets of meat within two days. Am I missing something obvious?
He doesn't have a huge appetite-probably one or two sausages/ bacon slices a day.

Freeze the rest in portions and take out what you need each evening to defrost overnight?

Can you go to the butcher or the meat counter in the supermarket and buy smaller quantities?

Pop each days portion into a freezer bag and freeze.

Sausages and bacon don't need to be used in 2 days. But get what you need from the butcher's counter - don't need to buy 6-8 sausages at once. That would only work if you had the time to go to a shop more than once a week though

The bacon and sausage will keep in the fridge for 4 to 5 days easily.

Bacon will keep in the fridge for ages.

Sausages will keep for a while, but as you say you're not that keen on keeping them in there, freeze them individually and take out the night before (or defrost in microwave)

No- won't have a chance to go to shop regularly. Maybe I'm over cautious but don't think I'd be happy cooking 5 day old sausages.
So-I can just open a large packet of sausages-separate into daily portions then freeze. That's probably the easiest thing to do. Will opening the packet (then freezing) shorten the amount of time it should be eaten or affect quality of meat?

Don't think so - meat should keep 6 months in freezer as long as frozen straight after buying and stored properly - I freeze pretty much everything I buy as I am rubbish at meal planning!

I do the freezer portions thing with sausages and bacon for my dad all the time. And saw a tv programme recently that six months is over cautious - will be safe for much longer if need be

You will be fine freezing the sausages, ot it doesn't shorten the life of them. Bacon is cured, originally this was to preserve it, this was in the days before fridges. It can last for months if it is properly cured.

Have you considered buying a bag of frozen sausages? You can then take out a couple and they cook from frozen.

In fact you can get breakfast frozen ready meals, I know tesco do one. If there is only one person eating it might be your best option. Take out of the freezer and microwave.

Why not cook all the sausages on day one and then just reheat. I would certainly keep cooked sausages for 3 days in the fridge if you give him 2 a day a packet of 6 should be fine and it makes cooking the breakfast a lot quicker since all the other items only take 5-10 minutes.

also Re tomatoes/beans - you could use fresh, and maybe substitute mushrooms for the beans

Thanks for all the suggestions! Cooking all sausages might be a very good idea. He's actually staying for a month so I may try doing a mixture of cooking in advance and freezing in portions.

Cook all the sausages and eat cold! I love cold sausages.

Just freeze the rest of the bacon.

Buy a large pack of already frozen sausages. Plenty around.

Half a tin of beans on a breakfast is a lot. I'm a bean monster and at most on a bacon and egg breakfast I'll have say 3x dessert spoons. Half a tin is for beans on toast as a meal.

Right-I'll give him a third of a tin of beans instead. One egg, two sausages, beans and a piece of bacon.

If you don't do beans often can I give you a cooking / storage tip?

Open the beans and put them in jugs with cling film over the top, microwave them and pour out of the jug. There is nothing worse than washing a pan that has had beans cooked in it.

How can you not have a microwave? Trust me if you are doing beans more than once an ice age you need a microwave.

Well...I've somehow managed 12 years without one. I'm not against microwaves just never got round to having one and it forces me to cook fresher I think. Still, given how little they cost and other's concern I may invest. I've had people I barely know offering to buy me one, I think there's a presumption anyone who could afford one, would.

Hey you are not alone, I done own a microwave either. I cook beans in the traditional pan on the hob way Grin

You can buy big plastic pots of beans that keep in the fridge and just have a lid you can screw on, so you can use a small portion at a time.
