Want to make a chilli but I'd like an absolutely lovely tried and tested recipe. Do any of you have an absolute favourite?

I usually do Jamie Oliver's American one with brisket and coffee.

Mine is the simplest one available- definitely not authentic but it is always a winner at home and work (chef, but this is the least cheffy recipe you'll ever see!!)

Brown minced beef with finely diced onions, garlic and garlic pepper.

Add chilli powder, paprika and a shed-load of cumin.

Add beef stock cubes (I prefer knorr to oxo but to each their own!), drained kidney beans, carton of passata, good squeeze of tomato purée.

Simmer the arse out of it until its thick and lovely.

Salt and black pepper to taste.

Eat.

Can add mushrooms and peppers if you like but I don't.

Told you it was neither authentic or cheffy! Is delicious though!

This Jamie Oliver one wins hands down for me, the sun dried tomatoes aren't traditional but it's lovely. It's from "Happy days with the naked chef" and is really simple to do

Chilli is one of these things that just gets 'made' and shouldnt follow a recipe!!

Mine is very much bung in some mince, add whatever spices I have in the cupboard, add some veg, (always onion and pepper, sometimes mushroom, sometumes carrot, even sometimes babycorn) , more spice, a couple of tines chopped tomato and a tin of kidney beans. Leave simmering for hours until it's dinnertime.

I think I got mine from bbc good food but can't find the link so I'll write it down. You'll need:

500g beef mince
1 tin kidney beans
1 tin tomatoes
1 pepper
125g mushrooms
300ml beef stock
1tsp chilli flakes (or more if you like it spicy)
1tsp paprika
A piece of (dark) chocolate

Fry your mince, then add your pepper and mushrooms. Add your spices. Then chuck in the tomatoes, kidney beans and stock. Give it a good stir and let it simmer for at least 40mins. Stir occasionally. Add a piece of chocolate or alternatively a pinch of sugar. Trust me, this makes all the difference! Season to taste and serve. Foolproof recipe. Unless your my MIL who complains hers doesn't taste right after changing most of the ingredients Hmm

Whatever recipe you use, always add Worcestershire sauce in!

It will automatically taste ten times better. Smile

Like the idea of adding chocolate and chorizo..do I have to brown the mince can I just chuck it all in the slow cooker? Also thinking of using brisket instead of mince. This is going to go horribly wrong isn't it

It definitely needs lots of cumin paprika and garlic and to be cooked for hours. Then left overnight and reheat the next day if poss, tastes even better.

I'm loving the idea of using brisket, kidney and black beans. Chorizo then some chocolate at the end with a healthy splash of Worcester sauce..is that overkill?

I'd brown the mince before slow cooking, leave beans till just before serving- enjoy mmm I'm hungry now Grin
