Tried and tested microwave meals?

We are going through a renovation and really only have space for a microwave, kettle and toaster. I had thought I could put a mini hob in another room but builders are using that to store tools etc and I don't feel it is safe to use in the same room as the kids as well as distance to sink for draining etc.

What I am after is some healthy veggie/ pescatarian meals to do in the microwave. I have seen the options on the BBC website but we need a bit more variety so after easy ideas and recipes that others have tried with similar limitations. Not worried about deserts etc just main meals really.

Can you fill the freezer with things like chilli/curry and just heat them up?

Any friends willing to let you use their kitchen? Grin

When we had our kitchen done we used quite a lot of jarred sauces (l love curry which is helpful!) with a selection of tinned chickpeas, quorn chicken pieces, frozen veg and microwaved sweet potatoes cut up into pieces. Microwave rice isn't bad.

I'd probably just buy some of those toaster bags and live on cheese toasties with tins soup but guess that's not quite healthy Grin.
Cooking on a bootstrap has quite a few microwave recipes on but not tried any of them. Sortedfood on YouTube did a microwave fish pie but it was only for 2 people so might be a pain to make for more people.

Scrambled eggs - beat the eggs in a high sided plastic jug or bowl with a knob of butter and a splash of milk. You can add grated cheese or chopped boiled or cured ham to the mixture. Microwave for a minute then take out and fork through. Repeat until the eggs are how you like them (4 eggs takes 2 mins. in or microwave). You can also microwave bacon (in kitchen roll) and baked beans to serve alongside the eggs. Or serve with smoked salmon straight from the fridge.

Oh and there are silicone moulds you can put in the microwave to make "poached" eggs (they come out like the ones in McDonalds mcmuffins).

"Steam" broccoli etc by covering it in boiling water in a bowl then sealing covered with a plate. Will taste much better than microwaved veg. Add some rice and scrambled egg and soy sauce = uni student fried rice.
