Girlie lunch for four of us

for tomorrow. I thought I would be inspired in the supermarket and wasn't. Starter,main and chocolatey pudding thing. We all eat everything and no one is dieting Ideas please (while I still have the energy to nip out to the shopsi f I'm missing stuff....

Was hoping to make it either tonight or frist thing tomorrow morning, so nothing that needs faffing.

French bread and pate for starter

Chicken casserole and veggies which can be bunged in and cooked forever!

Bought delicious apple tart thingie from a lovely cake place in France!!

Looked at the moules but they were not up to par today (fish, Monday and all that).

Like the meringue idea, might make eton messy type thing.

That just leaves starter and main....

If in France why not go to a good traiteur and buy something already made ??!!

Failing that marinade some prawns and tuna in lime, soy, garlic,olive or sesame oil and a hint of chilli - wop 'em in a pan with some julienned veg and pop some noodles in just before the end - takes 10 minutes Tops

as a starter - a nice bruschetta which you can prep before hand

puds - some lovely cheese and fruit

Et Voila - un bon repas pour les dames !!

Salmon and rocket pasta - easy and quick - can prepare everything in advance then just mix together - recipe here

ooh, I'm making something for the kids tonight from April Good Food (don't know if you can buy it locally) which is a dead easy salmon dish - 3 tbsp olive oil, a bunch of fresh mint, juice and zest of a lemon, S and P and I added a crushed clove of garlic. Pour this over 4 salmon fillets which you have put into a micrwaveable dish and cover with cling film.

Then you slice new pots and boil for 5 mins, then add sliced green beans and after a few more mins, some frozen peas (all in the same pan). When you add the peas, put the salmon in the micro for 4-5 mins on high. Cook fish and when done, serve the dressing on top of the drained veg and the fish on top.

Any good?

The Lemon and White Chocolate pudding recipe for anyone interested! Sounds a faff but worth it honestly!

For the lemon curd
2 x lemons
2 x eggs
1 x egg yolk
70g caster sugar
25g chilled butter cut into small pieces

Zest the lemons and measure 1 tablespoon into a small bowl. Juice the lemons, and add 60ml to the lemon zest. Add the egg, egg yolk, sugar and butter, and whisk together.
Microwave on high for 1 minute, then remove and whisk again. Microwave for a further 2 mins and whisk again. Continue at 30 second intervals if necessary until the curd is thick.

For the pudding
1 packet of croissant (about 8)
1 x lemon
2 x eggs
70g caster sugar
175ml single cream
85g good qualtiy white chocolate

Pre-heat the oven to 180oC/gas 4. Tear the croissants into around 1cm pieces. Bake them in the oven for around 2 mins to just warm thro'. Zest & juice the lemon. Whisk together the cream, sugar, eggs, lemon juice and zest.Pour the mixture over the croissants and stir thoroughly. Place half the croissant into a dish around 9 inch square. Grate the chocolate and sprinkle half over the croissants. Spread over the lemon curd and then the rest of the croissants. Sprinkle the remaining chocolate on top and bake for 20 -25 mins.

chicken and chorizo casserole (= chicken, chorizo, onions, garlic, peppers, paprika, cumin seed, bay leaf, beans and tinned toms) - google it and you get several pretty similar recipes. takes 10-20 mins prep time, 40 mins cooking time. serve with crusty bread and salad. really nice

These chocolate pots are lovely & you can make them well in advance as they keep really well in the fridge.

I used Grand Marnier when I did them (the chocolate orange taste), think they'd be nice with a biscuit base too.

Other things if you want a choice - pavlova - always a favourite and I like caramelised oranges (but OH not so keen!)

Got a great recipe for Rum & Coffee cake too which if you're interested I'll post, again keeps well in the fridge as it's a solid cake covered in buttercream and covered in cream!!! Lovely!!
