Fool proof dahl

Do you have a brilliant, delicious, fool proof Dahl recipe? I love eating it, but whenever I try to make it it turns out dull and bland. Please share your recipes!

I fry onions in butter then add garlic and ginger and curry powder.
Then I add red lentils, cover with water and chuck in a stick cube
Then cook until lentils are soft ( keep checking water levels)
You can top with fried onions but I usually put a spoonful of yoghurt and cumin seeds on instead

I fry the onions very slowly first with the spices (including mustard seeds and dried chillies), and leave them to one side, only stirring them into the cooked dahl a few minutes before it's ready.

I also use coconut milk in mine, and leave a wooden spoon in it as it cooks which discourages it from boiling over.

Chop garlic (1-2 cloves or 1-2 tea spoons of purée)
Onion (half, chopped finely)
Ginger, sliced. About quarter to half of an inches worth.
Add to oil.
Once translucent add spices.
I recommend cumin, chilli flakes for a kick (leave out if you want it mild), coriander, smoked paprika (only do half a teaspoon if you want it mild otherwise go nuts). Cracked black pepper and half a tbsp of curry powder. Stir and wait until spices are a dark brown but not burned.
Add half a can of coconut milk (for 2 people, adjust accordingly for more) plus red lentils and half a mug of water. Cover and cook on medium for 45mins.
I've no idea if this counts as a dhal.
I refer to it as my curry dhal thing. Grin

If you want it a bit thicker (it's thinner than jarred but still a good thick consistency) you can use
Coconut cream instead of milk.
Double/single cream.
Natural yoghurt. If you're on a budget and don't want to buy any extra just simmer for an extra 15mins or so.

I think there was a similar thread some months back.

On that thread I asked what sort of dal, because there are so many using the different types of dal.

I love tarka dal but have never been able to make it as good as in a restaurant.
