Blackcurrant recipes

It's a very good year for blackcurrants. Am going to have bucket loads.

I'll make jam but we aren't keen on them on their own in pies or crumbles . Any other ideas?

They freeze well but still have to use them.

Oh and I'll make some blackcurrant gin.

I love blackcurrants in summer pudding - you can make it the "normal" way with bread but I discovered making it with brioche last year and it was yummy!

I also like making a compote out of them with apple and stirring it though natural yoghurt, custard or having it on ice cream - but the combo also works as a crumble filling.

You could also try making blackcurrant ice cream or sorbet?

I freeze them and use them through the winter as a vitamin boost to granola - just leave a small handful out over night to defrost and top your cereal of choice with them, absolutely delicious.

Make ice cream - if you don't have an icecream maker just make a blackcurrant compote, whisk equal quantities of double cream and condensed milk, then swirl the compote through the condensed milk/cream mixture. The condensed milk prevents crystals from forming and gives the ice cream a good texture. Yum.

Thank you. Ice cream sounds a good plan!

Blackcurrant and apple crisp? I'm making a strawberry and apple crisp tonight for pudding

paradoxicalInterruption · 10/07/2017 19:00

Does putting apples with the blackcurrant make it less sharp?

It depends on the sort of apples you use - Bramleys are sour so if you want something sweeter use a dessert apple

May I ask lots of questions about your glut? How many bushes do you have? How old are they? What orientation do you have them planted in? What kind of soil do they need?
I would love to have too many blackcurrants!
Do you grow any other fruits?
Thanks!!
My suggestion is ice cream, btw.

Blackcurrants are the easiest thing ever. Started with 5 bushes about eight years ago. They are all large now. But had loads of berries in the second year and onwards. So you get a decent crop almost from the beginning.

I have very clay soil that gets waterlogged in the winter.
They are v easy to propagate, just cut a branch off and stick in ground into good soil. If you know anyone with a bush, just ask.

So I've now got another three bushes o. Top of the original. I need to stop now!

Made forty jars of jam last year and abou three litres of vodka as presents.

I should say that one mature bush would give you as many as you'd probably really need. I've got a full sized allotment so gave lots if space.

Also have gooseberries, apple trees, plum, strawberries and raspberries.

Ooh, thank you, that sounds amazing. Raspberries too? Mmmmm. Wish we had space for apples and plums... I can dream!

paradoxicalInterruption · 11/07/2017 10:00

My plot neighbour has dwarf plums and apples that look pretty good.

I've just thrown out some 4 year old blackcurrant jam. You get an awful lot of the bitter little buggers off one bush. I got several kg one year!

We tended to mix them with apple for pies. I made blackcurrant vodka with some, most years, too. And yes, usually had a lot of them cluttering up my freezer.

Pulled out the bush with relish, once it passed it's best.

Homemade cassis - ie blackcurrant vodka is the best thing ever. Makes a really delicious pink sparkling drink when you add it to cava. Then in descending order of deliciousness/ importance:
Homemade ribena
Jam
Squidgy flapjacks
Crumble
Compote

But if you only have a set amount prioritise the cassis!!

paradoxicalInterruption · 11/07/2017 11:12

Blackcurrant jam is the only jam I really like. It is the Queen of Jams.

Still only eat it about twice a year - on scones with cream.

My DH gets through a pot a week!

I'm going to try the mixing with apples for pies and look up squidgy flapjacks too....
