I am generally ok at making scones but I have friends round for tea on sat and want to know if I can make the dough in advance (night before?). Is this possible?

No. The raising agent in the flour starts to activate once you add liquid, so they won't be as light and fluffy as they should be. Scones only take minutes to knock together anyway.

They do but I'm busy the morning before they come so wanted to be efficient with my time!

Assemble dry ingredients night before, add liquid just before baking?

KimchiLaLa · 04/07/2017 22:48

Yes thought Of that. I may also whip the cream and stick it in fridge so that's done too. Do you think I can mix the flour and butter together and put that in the fridge then add the milk later?

I have mixed all the dry ingredients together, covered and put in fridge overnight, then added the milk just before baking with very good results.

I would mix the dry ingredients and measure out the right quantities of the others so it's completely ready, then mix and bake the next morning.

Oops just seen when the thread was made - how did they go?

Way too late for you now, but I'd make them then freeze them once cooked. I do that all the time and they always taste lovely.
