How to make a simple but tasty veg and lentil salad

I have seen a few recipes online but they require ingredients I don't have and tbh I just want a basic salad that will last a few days.

I am trying to eat more veggie dishes and I have never cooked lentils before so if you could give me a few tips on what veg works well with them, how I cook with them etc. that would be fantastic!

Why lentils in particular?

Red or green? I wouldn't add them to a salad myself. I prefer chick peas. With mustard seeds.

Lentils I make daal with.

This is delicious. You can change the vegetables, omit anything or whatever. It's good with feta too.
I usually use a packet of ready cooked lentils to save time.

For salads I cook them then, right after draining them, i put dressing on them - something like a vinagrette or a spicy tomato sauce - and you can mix in some chopped herbs too if you want - mint, chives.. Then, when they are cool, i serve them with spinach, grated carrot and tomato -
My favourite way to eat them though is made into daal - SO good

Use green/ brown lentils, ideally puy as they hold shape. Cook with some bay/time/parsley to add flavour.

Add dressing (french/ mustard vinagarette mustard or whatever you fancy tbh). If you do it when warm they absorb it but I like to do a double batch of lentil and only dress one half so I can have a different dressing on the secong half.

Add tasty stuff. I like roasted carrot and butternut chunks with thyme, garlic, a little chilli and firm goatscheese. If not veggie smoked bacon lardons are good - you can even make your vinegarette with the bacon fat.

Puy lentils with mushrooms fried with some chilli, and chuck in some rocket and feta - it's lovely.

Hugh F W's veg book has a lovely one - I think it's roast squash, puy lentils, rocket and blue cheese or something.

I have a new lentil obsession: I fry raw lentils in a bit of oil until they take a bit of colour - usually with spices like chili, curry leaves, mustard seeds, etc. and then I sprinkle them over a salad.

I use urid or channa lentils but it will work with any kind of lentil and without or with different spices. It gives a nutty taste and a great crunch to the salad.

You can probably prepare them by batch if you only fry lentils without spices, let them cool and then put them in a tupperware.

I do puy lentils with tomato, avocado, cucumber,spinach and cook some hallumi and red pepper then dress with a bit of oil and balsamic

brown lentils are delicious as a salad. often with fried halloumi, or whatever takes your fancy really.

Brown lentils go really well with grated beetroot (you can use the vaccum-packed type, but not the vinegary ones), a bit of garlic and some herbs. I also do them just with mayonnaise and some herbs. Nom nom.
