Mini wedding Cakes - Sponge or fruit?

I want to make mini wedding cakes and ice them with fondant icing. Should I use fruit cake recipe or a sponge? I have heard that sponge may dry out as they are small.

i would go for sponge then you could vary the flavours, some plain, some choc and some marbled, if you wanted to.

depends how long before the event you want to do them. You can do fruit ages before, but a sponge (would need to be madeira) I would only do 3/4 days before. HTH

I don't know why, but I don't think you can make mini fruitcakes. You could maybe cut up a big one - but I'd go for sponge too.

can do mini fruit - or you cab nuy them - the cake decorating shop I use sells mini fruit cakes for decorating

I have fruitcake issues (namely, you could knock down walls with mine). But I do a great sponge - take my advice with a pinch of salt - or dusting of icing sugar !!

Most people dont really like fruit cake.

I think the idea of having mini cakes is very contemporary where as fruit cake is very traditional. I'm not sure what fruit cake would taste like with fondant anyway??

apwd · 22/03/2007 21:34

Thanks! That's great I think its sponge. Just worried about doing them only a couple days before the event!
I like the idea of going for varied sponges too. What would anybody suggest I covered them in to achieve a nice icing finish? will fondant taste ok with sponge? I want to put small iced flowers on each one and ribbon round the bottom.
I'm new to the whole decorating cakes - usually stick to choc icing or melted choc!
Any advice much appreciated
