flapjack recipe please anybody?

150g marg/butter
75g sugar
3tbsp golden syrup
300g porridge oats

Melt fat, sugar & syrup, stir in oats.
Greased 7x7" tin, 20min gas 4.

Nooooo, you want this recipe. I've done extensive research ...

250g porridge oats (the cheap type, not large ones),
150g Butter,
2 generous table spoons Golden Syrup
half a tin condensed milk,
100g demerera sugar

baking tin, no bigger than about 18cm x 28cm

Method:

  1. Preheat the oven to 160 degrees c
  2. Line the baking tin with baking parchment.
  3. Melt the butter in a large saucepan over a medium heat and add the sugar and syrup. Keep gently heating and stirring until all is melted and mixed. If it starts to boil take it off the heat!
  4. Add the condensed milk and mix. Bring to the boil for about a minute.
  5. Remove from the heat and gradually add the oats, folding them in. All the oats should be coated, and the mixture quite dense, but still sticky. Don't add so many oats that the mixture becomes dry.
  6. Pour the mixture into the tins and spread about so that it lines the tin to a depth of 2-3cm. Don't squash the mixture in, just spread it evenly.
  7. Bake in the oven for about 15mins. You should take them out when they just start to go brown round the edges, don't leave longer than this. If they're still squidgy in the middle that's fine, they set on cooking.

What size tin of condensed milk? I've never made them with that in, does it make a big difference?

I use half a 405g tin and store the other half in the fridge to make another batch. It makes them exceptionally soft and gooey - a lot of the shopmade ones (M&S for example!) have it in.

The 100g of sugar is adjustable. It could go lower as they can be very sweet. You can use honey instead of syrup too.

Can't speak for the soupster, but I fling in nuts / seeds / dried fruit / glacé cherries etc with gay abandon.
Have also added a jar of mincemeat (left over from Christmas) to the mix with the oats and that was excellent.

Dried fruit is good. I've also substituted some (100g I think) of the oats for 150g of mixed pumpkin, sunflower seeds and linseed.

Honey flapjacks - scrummy!

Makes one round tray ? c. 10 inches

Ingredients:
100g butter
100g Demerara sugar
100g honey
200g porridge oats
50g dried fruits and nuts (e.g. sultanas, apricots, blanched almonds, etc.)

Method:
Heat the butter, sugar and honey in a saucepan, stirring occasionally, until the butter has melted and the sugar has dissolved.

Add the oats and fruit/nuts. Mix well.

Butter a tin. Spread the mixture in the tin (to about 2cm thick).

Bake in a pre-heated oven at 180C for 15-20 minutes, until lightly golden around the edges, but still slightly soft in the middle.

Leave to cool in the tin, then turn out and cut into pieces.

Every time I make flapjacks when you go to eat them they crumble in your hands. Should they do this and if not what am I doing wrong?? I'm getting fed up with the mess! Can anyone please help I'd be very grateful.

Soupdragon help please re flapjacks

I tried your receipe was absolutely fab but the flapjacks didnt really set. I cooked them for about 20 mins in the end so they were just beginning to go golden and then left them in the tin unti cold. They came out of the tin ok but wouldnt stay in one piece. Any ideas pleeeeeeeeeese?
