Sweet Potato Fries - help!

Could anyone share with me their really kick ass sweet potato fries recipes!?

DH loves them and always orders them in restaurants. I make them too chunky so he doesn't like them as much. And tbf, mine taste crap compared to restaurant ones.

I'm great with white potatoes but find sweet potatoes a lot more difficult to master.

I'm after tasty, thin and crispy ones if anyone can help!

Sprinkle with olive oil, corn flour and paprika and bake.

I have had the same difficulty and I think the problem is that the sugar in them caramelises/burns really quickly, so I reckon the solution is to coat them in something first for protection, e.g. seasoned polenta or semolina maybe. Haven't tried it yet though!

Waitrose also do very nice frozen ones, with a slightly spicy coating. I'm the only one that likes them in this house, so I stick with those Grin

Don't bother with sweet potato chips

Make butternut squash chips instead. A bazillion times nicer Grin

I have a sweet potato in the fridge that needs using up. So just a sprinkle of cornflour/polenta and spices?

Do you not need to oil them too?

Cut them and soak them in COLD water for at least an hour, rinse them, then coat in corn flour and spices Grin
I think the soaking removes the excess starch so they don't go so soggy when you cook them? The corn starch helps them get crrrruuuuunnnchy.

Definitely agree with the soaking and cornstarch. Soak to get the starch out, rinse, pat dry. Put a tablespoon cornstarch in a bag. Cut the chips thin and even sizes. (about 1/4 inch); put them in the bag, shake. Make sure there is only a thin coating of cornstarch. Put in a bowl, spray a bit of olive oil on them, mix, place on grease proof paper, don't overcrowd and baked for about 30 mins. Don't put any salt on them until they cone out of the oven as this will draw moisture out and make them soggy.

Thanks everyone! Is cornstarch the same as cornflour?

I bought the Iceland ones and they were well received. I usually get my shop delivered from Tesco but couldn't see any cone up on the search.

The Sainsbury's frozen ones are pretty good. I need to try the Iceland ones!

I can make sweet potato wedges with some success but thin fries either end up undercooked or burnt. They don't ever go fluffy.

My homemade chips are always soggy no matter what kind of potatoes I use. What trick am I missing? I coat chips in olive oil and whack the oven on full but they still come out flaccid Shock
