Can you make wholemeal batter?

DH and I want to do a healthy/poncy version of fish and chips for Sunday lunch tomorrow. We are going to do potato/sweet potato/jerusalem artichoke wedges for chips, homemade ketchup, and we have some nice fat pollock fillets, but can you make wholemeal batter? I have flour but it's organic wholemeal. I suppose I could do breadcrumbs if not. Has anyone tried it?

I wouldn't use wholemeal if you are oven baking it as it makes the batter heavier and will form clumps.

Why not go super healthy and just grill your fish?

or go to the chippy and get it all done proper

No, I was going to coat them in flour/batter and shallow fry them in a pan. I could just grill them, but we eat grilled fish all the time and the point was to try and do a spoof version of fish and chips

you shouldn't shallow fry batter, it needs to be immersed in even heat

I think, since you ask, mixing in some herbs with good breadcrumbs and dipping the fillets in flour, then egg, then crumbs and shallow fying would be the best course of action.

You're probably right. I have some poncy lemon and thyme breadcrumbs I bought at the farmer's market, I'll use those
