What to do with smoked haddock - dairy free.

I've got some smoked haddock that I'd like to use to make a family meal tonight. I was thinking fish pie or fish cakes. My issue is that my son (11 months) is allergic to dairy and I don't particularly like the taste of soya milk so want to make something that will hide the taste of the milk or use a different milk all together! I've got dairy free cream cheese and hard cheese. Any ideas or suggestions?

I just poach it in water these days. The other way wastes too much milk! I don't find it too salty.

Smoked haddock risotto on BBC Good Food site. Is delish and you can make it without dairy or add in a bit of your cheese. Also done in one pot in the oven.

I use it in Kedgeree. You can bake the fish in the oven dotted with whatever you use instead of butter and then flake it through the cooked rice element.

Can you make two pies? one small df one for him and "normal" for everyone else? Although have to say I don't mind white sauce made with soya milk - soya cheese is an entirely different matter!

Poach it, place on steamed spinach and top with a poached egg.

Butternut squash risotto. Halve a squash, roast in oven. Purée it in blender with some stock and olive oil. Use that to make a risotto. Add flaked smoked haddock at the end. Little bit of chilli if you like it, maybe some chopped parsley.

Fry some onion and garlic in oil then add tinned tomatoes. Put in the fish, cover and poach the fish in it. Finish with lots of parsley.
