Tastey but foolproof Cheesecake recipes please

Have never managed to find a recipe I'm happy with and at nearly 26wks pg the urge to bake etc is kicking in - first project a cheescake! Any flavour will do (although my tummy's saying citrus ), just needs to be one that should 99% of the time turn out ok. Thanks.

I have a banana choc baked affair that is divine, want it? it's a bit of a hassle if you don't have a food processor

ja9 has a gorgeous one too (that you may have sampled at dd's baptism?) that she might post if she spots this (though I don't think it's technically a cheesecake as I'm not sure it's got cheese in )

We use greens cheesecake mix but its bloody lovely. If you need citrus put some satsuma segments on the top

This is ace!

I must confess it often cracks (apparently due to oven too hot?), but always, always tastes fab...

Lemon baked cheesecake:
Oven to 140 degC

base:

Process in a food processor:
85g plain shortbread biscuits
1/2 cup almond meal
45g melted butter.

Then press into the bottom of a 22cm round springform tin (greased)

Filling:

Process until smooth:
600g cream cheese (Philadelphia or similar)
1 cup sugar
3/4 cup soured cream

then add 6 eggs, 1 1/2 grated lemon (or orange) rind and process until smooth.

Bake for 1 hour until just set in the middle. Open the oven door and leave to cool in oven (to stop cracking I think)

This Russian recipe has been handed down the generations of my family and it's dead easy too. It has never failed me - good luck!

Ingredients:
1 lb curd cheese
5 oz sugar
3 eggs (lightly beaten)
8/9 digestive biscuits
1/2 grated lemon rind or 2/3 drops of vanilla(optional)
1 small carton double cream

Grease an 8 inch, loose bottomed cake tin.
Crush biscuits and line the bottom.
Mix together cheese and sugar (food processor does the job)
Add eggs slowly and mix in well
Add lemon rind or vanilla (if using)
Add double cream
Pour carefully on top of biscuit base and bake in preheated oven (185 oc) for about 30-40 minutes.
It does crack a little but that adds to the 'homemade' charm

hello!

my lemon cheesecake recipe is so so easy and it's delish.... but it's not really a cheesecake...

pack of gingernut biscuits crushed for base with about 100g of melted butter.

whip up a pot of cream, add a small tin of condensed milk and the juice and rind of 3 lemons. add topping to base and leave to set.

add flaked choc to decorate.

makes 8 substantial portions.

(if i was in b.o.d. i'd be popping round for a slice)

Tassis - your banana one sounds great, yes please. Food processor is on my "to buy" list once new kitchen installed mid April!

Ja9 - hi, how's the new arrival doing? We're staying with Tassis towards the end of the month so hopefully see you guys too?
