Meant to go and buy potatoes to have chicken and mash but feeling a bit rubbish today so want to try and make something out of what I've got. It's just for me and toddler DD.

I have:

Raw king prawns
Whole chicken
Red onions
Vine tomatoes
Cucumber
Sweetcorn
Frozen green beans
Frozen peas
Nando's marinade
Pasta
Brown rice (but I'm shit at cooking rice)
Cheddar
Mozzarella
Dairylea
Bacon
Eggs
Milk
Yorkshire puddings
Stock cubes
Gravy granules
Garlic powder
Dried rosemary, thyme, oregano etc

Oops! Too early, what would you cook for dinner using this stuff? Preferably not too taxing. Looking forward to crawling into bed Smile no bread otherwise would probs just do us sandwiches. I have bread flour but I've never made it before and I reckon it's more of a faff than I'm after.

I would spatchcock the chicken and cover with the marinade
Do rice and peas on the side maybe

Oh and butter and flour so could do a white/ cheese sauce maybe with pasta? Would that go with prawns?

Personally I'd roast the chicken and eat it with lots of veg, yorkshires and gravy!

I'd joint the chicken, stuff the breasts with mozzarella and wrap in bacon and then do a portion of pasta on the side with the white sauce you suggest on it Smile

I can't cook brown rice either but for white rice I use Jamie's method and it works every time. you need a pan with a well fitting lid. choose a measure (I use a small mug) put 2 measures of water into the pan and bring to the boil. add 1 measure of the rice(I use basmati and don't wash it)bring back to the boil, put on the lid, turn the heat down to as low as you can and then put the timer on for 10minutes. do not touch, open or stir. I sometimes use a tin of coconut milk as the measure and add a tin of water to make up the liquid.

I would do something simple and quick like pasta, prawns with the tomatoes, onion, garlic etc, with plenty of seasoning and just use a bit of olive oil to drizzle over when it's done.

I find brown rice easier to cook than white rice, I don't measure rice or water but simmer for 30 mins sometimes longer depending on how much rice, I find it better cooking it in a wider pan like a deep frying pan, it cooks quicker, just don't stir the rice.

Ah such lovely sounding suggestions! Spotted some potatoes so stuck the chicken in so could have a roast - am craving comfort food, and it's DDs favourite. Then started to peel the potatoes and realised they were out of date. Chicken was already on so just going to chuck some oven chips in with it in an hour and some yorkshires and do some steamfresh veg in the micro and have it all Blush will remember all your ideas for a day I'm feeling a little more motivated though. And thanks for the rice tips, will definitely try that.

Potatoes don't really 'go out of date'. They do sprout (just cut them off) ir go rotten, (but you would know immediately if that was the case). You probably could use them... Are they in the bin now, though?

I think I'd spatchcock the chicken too, and serve it with a tomato and mozzarella salad.

I eat potatoes weeks past their date.. as long as they haven't gone soft they will be absolutely fine!! This why there is a campaign to ditch best before dates - they are total nonsense!!

There wasn't even a date on them - they were from the corner shop about 9 days ago? But inside they had brown/ green bits. Really didn't look appetising. And in the bin now.

The oven chips I have are fancy schmancy Tesco finest ones which I got due to a recommendation I saw on here. So not all bad Grin

Agree with out of date potatoes, if they are going slimey ,smelly or green I bin them, otherwise they get souped or sliced up and roasted . The only thing I don't do with old potatoes is peel them because I find they don't peel easily and I am the sort of lazy person who buys supermarket mash and freezes it - but only when it is reduced.
