Nice Recipes for Quorn Mince

I'm not a fan of mince so have never cooked Quorn mince before. DS's nursery tells me he really likes it and always wants extra helpings of their veggie shepherd's pie and lasagne. He will stop going to nursery in June when I leave work to have his younger brother or sister and I'd like to make some Quorn mince dishes for him so he doesn't miss them too much.

He is nineteen months old but I don't find I need particularly to toddlerify his meals. He even likes quite spicy food. The tricky bits are that he is allergic to dairy and aubergines and we think likely soy too. I have some good dairy substitutes though and nursery just put a portion of lasagne aside for him without the sauce, which he seems happy with. He isn't a fussy eater generally but can sometimes be a bit wary about dishes that are very tomatoey as it hurts a little patch of eczema he has near his mouth.

I'm finding it hard to think what would work well when cooking it as it's not something I'd enjoy myself. Can anyone suggest or link to some Quorn mince recipes they like, that might be tasty for him or give me any tips on how to prepare it nicely?

I just sub it in in any recipe where I would usually use beef mince, so bolgnaise, chilli, shepherds pie, pasta bake. I don't think it has an awful lot of flavour so tend to add extra garlic, onions, balsamic vinegar, Worcester sauce, herbs, red wine etc to give it a bit more taste, it also helps to cook the dishes for a while so the mince takes on a bit more of the flavour.
Quorn have a massive range of products now so may be worth looking at some of their other things too, I often use the pieces in a recipe that uses chicken and sausages in a sausage casserole.

I'm veggie but don't like Quorn mince except in shepherd's pie.

Here's how I do mine in the slowcooker:

In slowcooker, shove - 4 sliced carrots, 2 sliced leeks, 2 chopped onions, couple chopped garlic cloves, packet of Quorn mince, glass of red wine, couple of tablespoons Bisto onion gravy granules, glass of boiling water, lots of chopped flatleaf parsely. Leave it to cook for ages.

Make sweet potato mash just before you want to eat.

Assemble hot mince, mash combo, shove some grated cheese on top and grill.

Could easily be adapted/simplified for a toddler and then frozen in small portions.

Thanks both. It was getting it to have flavour that I was worried about. Sounds like plenty of seasoning and cooking slowly is the key to making it taste nice. I'll have a go soon and hope he likes it.
