Can you inspire me with some healthy and really simple meals?

I'm feeling too rubbish to cook ATM - morning sickness has taken over although I'm hoping I'll be out of that phase soon But I'm looking forward to trying some new things when I'm feeling better.

So far on my list I have colcannon and fondant potatoes (the latter is because I may have become addicted to the current series of Masterchef Hmm).

I am not a great cook anyway, I can do basic stuff like bolognese, tomato sauce, cauliflower cheese, couple of soups etc... but I am really uninspired.

I'm autistic with fatigue/pain issues so stuff needs to be simple as I struggle with standing up for ages and with timings etc. I rely a lot on ready meals and convenience stuff and I hate it, it's expensive and I feel rubbish after eating it, I don't even enjoy the taste anymore.

Any ideas please? Thanks

What about various rameny type noodle soups? So easy.

Fry up some ginger and garlic and spring onions (you can et frozen already chopped ginger and garlic if you want to not faff). Chillies if you want. Then stock or miso (red or white miso paste and boiling water), a bit of fish sauce, soy sauce and lime. Noodles and sweet corn and any other veg in. Could have chicken or any other meat thrown in at last minute. Coriander on top of you like. Probably takes fifteen mins all in. No timings of xyz just as it's ready.

Ah that sounds fab thanks. I did make one once and it was nice, I should try it again! My issue is that even if I try it once I find it so stressful doing something new that I then avoid it Blush but it was quite simple now you've reminded me! Thank you!

Cook some pasta. When it's cooked and drained, stir in some olive oil, rocket, smoked salmon, lemon juice and lemon zest. You can add black pepper too if you like.

I love this recipe as it takes literally minutes and tastes so fresh.

If you can stomach fish I have a really easy one. It was on an old series of Eat Well for Less, awful programme but this was actually good.

Fish parcels, make them up and keep them in the freezer to cook whenever you want them. Get a square of greaseproof paper to layer everything on. Scrub and slice a sweet potato, put a frozen white fish fillet on and throw on some frozen peas and green beans, drizzle some olive oil, lemon juice and salt and pepper on top, wrap it up and freeze it. They microwave from frozen in 10 mins or you can wrap them in foil and oven cook them until the fish is cooked through. I do this a lot and make up a few at a time to keep for nights when there's no time and do some cous cous whilst they're cooking.

I have a really simple pesto sauce made with toasted pistachio nuts instead of pine nuts.

Dry fry the nuts, add to a food processor with a few handfuls of fresh basil leaves, grated parmesan and olive oil. Blitz it up and add to pasta.

It keeps in the fridge for a few days, although it does'nt last that long in my house cos every time I pass the fridge I have a spoonful.

I also do a really simple puff pastry tart.

Bake a roll of ready made puff pastry, spread some tomato puree over it, add some caramalised red onion rings (fried gently in oil until soft then add a tablespoom of sugar.
Then add some torn up mozzarella, a layer of chopped tomatoes, then blobs of mascapone, torn fresh basil leaves, drizzle with olive oil and add salt and pepper and bake for around 20 minutes on 180 ish.

I don't like cooking at all, but those two recipes are quick, easy and taste great.

Roasted veg in the oven
Stick some chicken chopped up in while the veg is roasting, just add some olive oil, herbs or spices or lemon
Sausages can be done in the oven too, the heck chicken ones are nice with the above veg. Or get some frozen mash and have with peas/sweetcorn and ready made gravy

Chicken and balsamic tomatoes:

Need-

Chicken thighs
Balsamic vinegar
As many tomatoes as you want (I usually use about 3 punnets for 3 adults but get the poncy ones so you only get a few- baby plum or cherry are also great!)
Garlic
Olive oil (I use The squirty one sometimes)
Potatoes
Bit of butter
Any veg you fancy

What I do-

Brown chicken thighs skin down so it's crispy- if you're not using skin on ones don't bother
Put tomatoes in roasting tin
Pour good slugs of balsamic over them
Add about 4 cloves of garlic (crushed) and spray with oil
Mix together
Put thighs in tin
Oven the lot at 200 for about 20 mins or until chicken is cooked
Boil new potatoes with skin on til they're really, really soft then toss them about in colander (voila, crushed potatoes!)
Put potatoes back in pan, add knob of butter and toss about a bit
Serve.

Really easy, really really tasty and only 2 pans to clean if you swish out the potato one and use that to cook some quick cook veg. (Sometimes I can't be arsed with the veg and figure that cherry tomatoes make up for the lack of it!)

Salmon fillets , cooked in 8 to 10 minutes. Secret is getting the pan really hot before the salmon goes in skin side down. Don't touch it until you can see that the salmon is slightly over half way cooked. Then turn it over and add some cherry tomatoes to the pan. Meanwhile add boiling water to cous cous ,along with a bit of stock powder. Chop up some parsley. Fluff up cous cous, add parsley. Serve with lemon, or if you want a sauce squeeze lemon juice into good Mayo.
