any ideas for school cake sale??

My rubbish fairy cakes were the last ones on the table at the school cake sale today. I'm not surprised as in comparison to everybody else's amazing efforts they looked rubbish.

Suggestions would be gratefully received for how to avoid this sort of disaster in the future. What's an easy recipe for a cake that is easy to transport without looking half flattened before it's even gone on sale.

Help please for a rubbish Mum....

Nigella does a section on cakes to make for such school occasions....
mini cheese cakes
gingerbread with lemon icing
mini pavlovas...(scrumptious)
Millionaires shortbread
mini key lime pies
mini lime syrup sponges

or how about some cupcakes?

My friend just buys plain sponge fairy cakes from Tesco and then decorates them with icing and sprinkles and the like. Cheating I know, but she says they sell quickly and she is a particularly bad cook!

Second lemon drizzle. Or get yourself a copy of Mary Berry's Ultimate Cake Book which has lots of great ideas for cake sales.

Buy foil roasting trays from the supermarket and do a traybake, then take it to the venue in the 'tin' and let them cut it into pieces.

I once made ginger bread sheep, that was a laugh! Sold quite well too.

I didn't have much time last time our School had something like this and made top hats, mini muffin cases with a blob of melted white chocolate in the bottom, then a marshmallow and a smartie/chocolate button stuck on with a tiny bit of melted chocolate, after they have cooled they look a bit like top hats. Made some crispy cakes too but again tiny ones in mini muffin cases. Seemed to go down really well.

Mini Lime Syrup Sponges
**
125g unsalted butter,softened
175g caster sugar
2 large eggs
zest 1 lime
175g self raising flour
pinch of salt
4 tbsp milk

syrup
***
4 tbsp lime juice plus zest for decoration
100g icing sugar

8 bun mini loaf tin,well buttered

Preheat oven to 180..gas mark 4
Cream together butter & sugar,add eggs & lime zest,beating in well.Add flour & salt,folding in gently,then add the milk.Spoon into mini loaf tin & bake for 25 mins.
Prepare syrup by putting lime juice & sugar into small saucepan & heating gently until sugar dissolves.
When sponges are ready prick them all over & pour the syrup over evenly.
Wait until the cakes have cooled slightly before removing from tin(but not till cold)

Grate some lemon zest on top before serving.

I've just gone out and bought Nigella's book. Thanks for the tip - it looks brilliant - nice things but not too elaborate.

I think I'm going to have a few practice runs at chocolate brownies and then do them every time I need to make cakes for school!
