Anyone know of a really nice moist apple cake recipe please?

Someone posted a lovely one here once - hang on, I'll see if I can find it. I tried it, it was really nice.

Found it, it's WWB's recipe. It was really easy, texture a bit like a soft scone, was really moist and tasted lovely.

8oz self raising flour
pinch of salt
4oz butter or margarine
2oz raisins
2 eating apples, peeled, cored and roughly chopped
3 oz granulated sugar
1 egg, beaten
2 tablespoons milk

Sift the flour and salt, rub in the butter until it resembles breadcrumbs Stir in the raisins, apples and sugar Add the egg and milk, mix with a knife. The dough will be soft.

Spoon the mixture into a greased 8" sandwich tin, bake at 180C for about 50 minutes, or until a skewer inserted into the middle comes out clean. You may need to cover the cake with tin foil if it cooks too quickly on the outside. Cool in the tin. When you turn it out, sprinkle with extra sugar.

This is ver moist - yin fact it's so moist that it needs to be kept in the fridge because it goes mouldy in the tin.

Apple Cake

2 eggs
175g Caster sugar
1 tsp vanilla essence
½ tsp baking powder
130g butter
225 g SR flour
1 tsp cinnamon
900g cooking apples, peeled and sliced
Vanilla sugar

Melt butter and leave to cool. Add eggs, sugar, vanilla, baking powder and cinnamon and beat. Mix in flour.
Pour ¾ mix into 8 inch tin. Add apples, then pour over remaining mixture and sprinkle the top liberally with vanilla sugar.

Bake at 190° for 1 ½ hours

Did Prufrock's as I hadn't got any raisins - it's just now come out of the oven and smells wonderful!
