cup cakes/ fairy cakes..t.hat are not dry?

any ideas for a good recipe that will make nice moist cakes? mine always seem dry. i want to make some nice ones for dds party.

Fairy Cakes

Ingredients:
50g soft margarine
50g self raising flour
50g caster sugar
1 egg

Method:

  1. Set the oven to Gas mark 5 or 190C.
  2. Place 6 paper cases in to a patty tin.
  3. Sieve the flour and the caster sugar in to a large bowl
  4. Add the egg and the margarine to the large bowl.
  5. Using an electric hand mixer or a wooden spoon, mix until light and fluffy.
  6. Using a teaspoon fill the paper cases.
  7. Bake in the oven for approximately 15 minutes, until the cakes have risen and are golden brown and springy to touch.
  8. Decorate the cakes with water icing and coloured sugar strands.

i usually do 4oz sr flour, 4 oz caster sugar, 4 oz butter, 2 eggs, and the secret ingredient, a splash of milk or water.
helps with the moistness

I think I cook them at about 160. but that's in a fan oven, so about 20 more for an ordinary electric oven. not sure what the gas equivalent is

thanks everyone i also think i dont put enough mixture in the cases, so they are always shallow and dry.

i third a splash of milk

and dont over cook them

15 mins is the absolute MAX IMO, i check after 12 mins! i cook them at 180c

Nigella's are v easy

125g each of sraising flour, butter, sugar
put in a mixer with 2 eggs, 1 tsp baking powder and vanilla essence and splash of milk. Whizz until smooth batter, cook for 20 mins, done.

My vote is with Wickedwaterwitch for Nigella's recipe - it is quick, easy and has always produced lovely moist cakes for me....yummmmm

Deffo equal quanties of flour, sugar and milk, but most important re moistness, weigh the eggs and make up the difference with milk so they weigh the same as the dry ingredients, IFYSWIM
