I am looking for a good recipe for Lambs liver, that isn't just liver and onions

I quite like liver and onions, but I am not that keen on liver tbh, so anything that disguises the taste would be good
I make it for dh more than anything, and in the belief that it is good for you

my dp does it with onions and garlic chopped very small and lightly fried pinenuts and a bit of tin chopped tomato plus sundried toms, sauce is juicy and good tho i dont much like liver - it's like eating a filter in my opinion...[bleeugh smiley)

I make a dish called Italian liver which involves cooking the liver in milk. Sounds yuck but its so tasty.

This is the recipe but I alter the quantities depending on how many it's for. I think this serves 4 but don't quote me!

Ingredients
12 oz lambs liver
1 oz flour
salt and pepper
1-2 ozs butter
1 Large onion
quarter pint beef stock
half pint milk
2 level tbsp tomato puree
1 clove garlic crushed or finely chopped
quarter tsp mixed herbs
2 tbsp fresh double cream
chopped fresh parsley

Method
Cut the liver into small pieces and coat in the flour
Melt butter in a frying pan and add liver.
Brown on all sides then remove from pan and set aside
Put chopped onions into fry pan cook slowly until tender
Gradually stir in stock, milk, tomato puree, garlic and herbs.
Bring the sauce to the boil stirring continuously
Add the liver to the sauce cover the pan and cook gently for 10-15 minutes. Season with salt pepper.
I serve this with long grain rice.
Trickle cream over liver and sprinkle with parsley.

Flower, that sounds nice, might just try that. I have heard of soaking liver in milk before to make it less bitter. Thanks

You shoudn't need to soak lambs liver as it's not usually bitter. I have used ox liver before if no lambs liver avaiable and you must soak that in milk.

This was the only dish made with liver that my kids enjoyed when they were young. Couldn't get it into them any other way. Even now when they come for a meal and I ask if anyone has a prefence they often chorus at me "Italian liver please"

It's also very quick to prepare and cook.

Flower3554, Just wanted to tell you, that we really enjoyed the Italian liver dish last night. The dc's are going to get it for lunch, so hopefully it will be a hit with them as well
