do you think parsnip and beetroot soup would work??

I got parsnips and beetroot in this week's organic box. We're eating out a bit too much this week (mainly because it's DD's birthday) but I obviously dont want the veg to go to waste so i thought I'd make a soup. I could make two separate soups of course but that would be too much like hard work .

Does pasnip and beetroot together sound delicious or vile?

I'd do spicy parsnip and apple soup and use the beetroot to make a salad with.

no no and imagine the colour. i think it would probably taste earthy at best and rotten at worst.

I have made carrot and beetroot soup before, it is an odd colour and you wouldn't want to spill it down your white top, but parsnip should work too, there was a link to a recipe from someone on here, will have a look for it...

YES it works perfectly, it is gorgeous. I add about 300g of (cooked) kidney beans, a chopped small onion, some chopped root ginger, big pinch of basil, 1/2 tsp of paprika and some black pepper too - boil until all really soft, then blitz until smooth, then add a large squeeze of tomato puree (about 2 tbsps!) and then boil and stir for another 15 minutes (this meakes it really soft and creamy). I like to add another 300g of cooked kidney beans and maybe some butter beans and heat through before serving, but you could just eat it smooth.

PS - with that recipe of mine, chop up and add any red cabbage you have as well, it blends up really smooth and makes the colour even more amazing

thanks very much everyone. I think I'll have a go with half of the ingredients that i have and get some sour cream or creme fraiche to top it off.
DingDong - is that the recipe you followed only using some carrots as well??

well I made the beetroot and parsnip soup and you were all correct. It looks pretty yukky, it is quite sweet but it's rather delicious too.
It needs lots of bread though and definitely a big dollop of sour cream.
The test will be when i offer it to the children tomorrow. Watch this space
