Boiled milk?

My assumption was that if milk boils, it turtles and goes off? I was just watching a video on making rice pudding and they let the milk boil? I have never tried to make any recipe with milk unless it's porridge. I have also been told that milk Burns? Please enlighten me, what can and cannot be done with milk.

Sorry I am using dictation as it is easier for me than writing. That should read milk curdles not turtles

It turns so quickly, I'm sure I've let it boil by accident when making hot chocolate.

It doesn't go off, and the children have never complained about the taste.

I can't abide cow's milk, so I can't comment from personal experience.

Milk that has been boiled is less likely to 'go off', as boiling will sterilise it. Curdling is caused by some acid in whatever you're cooking.
