muffings without salt

Hello, I've been trying to make muffings many times and using SR flour and baking powder but they never rise! I've looked thrrough many recipies and they call for salt which i was avoiding. Could it be the reason my muffings don't rise? Does anyone have a good recipy I could try, please? When the recipy calls for cups what size of cups? my guess is 100g or may be 200? Ta very much.

You could be over-working the mixture. I sift the flour (if I'm using baking powder I use plain flour) and then fold everything in together so it's barely mixed. Then straight into the oven. Salt is for taste only, I thought.

I don't think it would be lack of salt. I know with muffins you don't have to overmix the mixture - it should be quite lumpy. The only other thing I can think of is that your baking powder might be out of date because it won't work so well if it's old.

Some recipes here - Delia Smith is usually pretty reliable

Oh muffins. Tricky. I made some once, following a recipe. They were inedible - far too much baking soda. Gone back to fairy cakes.
Will watch this thread for good ideas though!

Thank you very much, I'll try not to overmix. I'm always worried though that i'll end up with the lumps of flour. How to miz and not overmix? Ta.

I rarely put the salt in my muffins and they're fine! Susan Bremner's muffin book is fabulous - recipes are in oz/gms and really yummy.

Fedda - if you're still there, try this recipe for 6 large or 12 small muffins.

250g plain flour, 1tsp baking powder, 175g cooked bacon (chopped), 50g cheese, half a tsp mustard, pinch of cayenne, 2 lightly beaten eggs, 65g melted butter, 125ml yoghurt.

Sift flour and baking powder into a bowl. Add the rest of ingredients, fold in with a light touch. Spoon mixture into prepared tins. 180C (or gas mark 4) for about 25 minutes.

I've been adding a handful of grated courgette but tonight I'm being brave and adding grated carrot. Wish me luck. He's so fussy, but if it comes in muffin form it appears that he'll eat anything!
