I need some one-pot veggie meals that don't contain dairy...

Almost all my one-pot veggie meals seem to contain milk or cheese or a white sauce, what other options can I try?

I know I'll get some good suggestions here!

Veggie chilli; veggie curry; lentil dahl; chickpea casserole type thing; soup; veggie sausage casserole. I'd normally serve these with "something" eg: rice, cous cous, so maybe I'm cheating saying they're "one-pot"???

Lots of veggie tagines out there (I have one with spinach, chickpeas and aubergines, I think). Oh, and you can do loads with coconut milk.

Does stir-fry count as one-pot?
I make a casserole with barley and field mushrooms.
A vegetable Tarte Tatin (roast lovely looking vegetables in the bottom of a shallow pan, put vegan puff pastry (ready-made - most supermarket pastries are vegan) on top, cook, turn out. (actually bsae it on Delia Smith's Red Onion Tarte tatin ofr accurate instructions!)
Ratatouille
Vegetable Pillaff rice
Thai curries

Thanks for the suggestions janeite I'm sure there is some way of making them one-pot, thing is I'm looking for inspiration for meals that I can make to take round to other people, so was looking for easy bung it all in a casserole type meals. I like the sound of a chick pea casserole, maybe it would work to put raw couscous or rice in the bottom of the pot first then add all other ingredients and lots of liquid?

NQC tagines sound good too, thanks!

ratatouille is a classic, very easy to make

We made red cabbage at the weekend - with onion (fried beforehand), apple and sultanas. eaten with potatoes

One of the things I cook best and like most is pumpkin and vegetable stew. Fry one red onion or a couple of shallots, chop and add most of a small hokkaido pumpkin and whatever other vegetables you like (one veg at a time), some tomatoes and tinned kidney beans or chick peas last, then a couple of cups of water with half a teaspoon of Marmite dissolved in. Season to taste and leave simmering for aaaages.

Risotto with vegetables and pine nuts

Leek and kidney bean stew, with dumplings

Mushroom and barley 'risotto' (does use milk but I use soya milk)

Soups, ie sweet potato and red lentil

Vegetable korma (I usually serve with rice but you could just put extra potatoes in and make it a one pot meal)

A friend of mine used to make a layered bake with baked beans at the bottom, reconstituted vege sos mix (you know that packet stuff) in the middle, then mashed potato with sweetcorn and cheese at the top. It was very studenty but sort of wonderful as well

I will keep thinking. If you fancy any of above recipes just ask.

Oh actually scrub the barley thing, it is pretty cack unless it has loads of parmesan on the top

ditto mention of cheese on the studenty mash thing (but that would be nice even without cheese)

Hi climbingrosie... I just substitute the milk for soya milk... you can make a nice white sauce with soya... or even a cheese sauce with vegan cheese... [although I must admit I haven't made a dairy free cheese sauce yet]
