Make a tart type thing with shop bought pastry, red onions cooked in balsamic, Brie dotted all over the top. Cooked in oven until melty.

Brie & grape sandwiches.

Baked in oven and eaten with bread.

Big fat wedges of Brie devoured every time you pop into the kitchen to check it hasn't mysteriously burnt down.

You can freeze brie and other cheeses. Just cut into wedges , wrap well and freeze . It wil be fine when it is defrosted even months later..

It can be melted like Camembert. My baker is actual a Brie baker not a Camembert one.

Personally, I'd just eat it!

chop it up and freeze it and then use it throughout the year in tarts, quiches etc. I did this with a round of stilton last year and it has been great being able to grab a chunk and throw it in when cooking.

Yep freeze it in small pieces so you have some when you fancy a few bits of cheese and crackers.

Contemplating the same for some blue cheese I have leftover, assume that's ok to freeze and defrost, anyone know? The mould is confusing me. Smile

You can freeze Stilton, it goes crumbly when it defrosts and probably should be used in a couple of months not left for a year like I did with last years Stilton...
