any ideas for easy but impressive canapes?

catering for luncheon party for 30 next weekend and thought we would start with drinks and canapes - but they are often so fiddly! Any simple but impressive ideas? How many per head? Thank you

Safe Freezing and Thawing - Hello All. Have been freezing veggies and Fruit and have cooked meat or given 7 month old baby ham. Now have done first Lorraine Kelly recipe (great book) with Chicken and veg. Once cubed in ice cube trays if I take it out of freezer and put it in fridge night before, is that satisfactory? Am petrified of causing food poisoning which is why I steered clear of freezing meat dishes for baby boy. Help???????

How about making up a load of tapenade in the mixer and sticking it on small bits of toast - you could do one with black and one with green olives to have a bit of colour. Or see Nigella's easy ideas in How to Eat (I can't remember what she had). Salmon on toast is easy too.

I bake baby potatoes in the oven and then slice open and serve with cream cheese and chives.

Also do the little cocktail blinis you get from the supermarket with sour cream, smoked salmon and 'caviar' (fish roe really).

I've done croustades (which you can buy at supermarket) filled with one of the many pre-made snadwich fillings e.g tuna and mayo (spinkled with paprkia), guacamole (sprinkled with chilli) or salsa toped with a coriander leaf.

Baby sausages are always good - serve on tray with cocktail sticks with a dish of pickle for dunking in.

Can't think of any more for now...

Flumpette - totally confused by your post!

Shortcake - my SIL makes what she calls cucumber sandwiches. Spread Boursin on a tortilla, sprinkle with diced peeled, seeded cucumber, roll it up and cut into slices crosswise. On the same lines as Mrs Fogi, how about bruschetta?
