Veggie chilli or similar

We've got some friends coming over on Saturday and I'm doing a chilli in the slow cooker with jacket potatoes, rice, sour cream etc.
One of the party is vegetarian so I thought I'd do a veggie chilli on the hob.
I'm after ease as you can probably tell as I want to be able to enjoy my the company of my friends rather than stress in the kitchen.

Does anyone have a delicious veg chilli recipe please or suggest something else that I can make that will go with the other bits I'm doing?

We dont eat meat and make chili the same but using soya mince or green lentils. I usually blend up some carrots, celery and peppers into the sauce too.

Frozen chopped onion, lazy garlic, a good teaspoon of ground hot chilli powder, frozen Quorn or soya mince, frozen sliced peppers, canned kidney beans, carton of chopped tomatoes, good slug of soy sauce and about half a pint of boiling water. Takes about 20-30 minutes from start to finish.

The pepper and bean chilli on bbc good food is delicious and we have it often in our house!

Thanks guys. My vegetarian friend doesn't like quorn etc otherwise I'd have done that for sure.
I'll check out the other recipes though - thank you.

Cilantro is coriander, I'd love to know a good swap for fire roasted tomatoes though. I just use normal tinned toms

I often make chilli with the same base as a meat one- tomato purée, chopped toms, oregano, chilli powder, cumin, kidney beans, but instead of meat I add loads of veg like peppers, courgettes, sweet potato etc. And a handful of fresh coriander stirred through at the end. It's bloody gorgeous!

You could make it on the hob the night before, and then heat it up on the hob on the night with a little water added?

ILoveAGoodBrusselSprout that looks like a lovely recipe, going to give it a go. To sub fire roasted tomatoes in the past I have added a little smoked paprika.

Whathaveifound, the recipe on th BBC website says 1 tbsp of all the different spices. Should that be 1tsp?

So, I made the pepper and bean chilli from BBCgood food (such an easy recipe and delicious) and the Mexican one pot (slightly more faff but still easy and very tasty) and both went down a treat.

They seemed to compliment the chilli con carne and so were eaten by the vegetarian and the carnivores alike.

I think you can buy fire roasted toms in tins from Waitrose

I don't use a recipe but I make a great veggie chilli using grated carrot, courgette, mushroom and red onion and a packet of ready-to-eat puy lentils. Grating the veg and sautéing them in plenty of oil gets a good mincey texture. For seasoning you need herbs as well as spices so coriander, basil, oregano. Plenty of garlic. Paprika, smoked paprika and chilli powder in roughly equal measure. A generous spoon of cocoa powder and freshly squeezed lime juice.
