wurlywurly · 16/02/2007 16:52

Am attempting to cook potato wedges from scratch, have cut the in chunks brushed then with oil and shoved them in the oven.

Will they cook ok like that, or should i put some water in with them as well???

no, that's fine - put them on 200 degrees

no water. i sprinkle with a bit of paprika and chilli powder too... give them a good shake every now and then

Or next time, if you want to hurry them up a little, you could cut into wedges then put in boiling water for a couple of mins, then into the oven (like roast potatoes but with less oil)

i always par boil mine a bit too
keeps them fluffy on the inside and crispy outside... and quicker too

I make up a bag with a bit of flour, mild chili powder and paprika. Get your raw wedges and shake them up in the poly bag, remove from bag and discard leftover dry mixture, then put in the oven - quite hot - on a reasonbly well oiled tray.

I put mine in a bag with oil, garlic and paprika. Then cook in hot oven. No parboiling.

i do mine on the grill tray, the air circulates better and they are crispier, imho. other than that, no parboiling, olive oil and either a spot of soy sauce or some smoked paprika and in at 200 degrees.

Roughly how long do these take to cook without par boiling? Sounds pretty tempting.
