I've used corked wine before when you don;t need too much, for onion gravy, but not sure if it's worthwhile using it for something like coq au vin where you need a lot. The wine cost OH £65(!!!)in a charity auction, where they said that there was a risk it was corked, so it was cheaper than it should have been if it was perfect, and it's absolutely buggered, I just can;t bear to pour it down the sink!
