If you cooked a whole bag (1.5kg) of potatoes how many baking trays do you think you'd need for roast potatoes? 2 , 3??

Definitely 2. And that's 2 big ones. The potatoes can touch each other but preferably not overlap. I've tried many a way to roast a tato and patience and space do make the best ones. And hot fat. Not olive oil

Thank you thank you! I'm cooking for 10 possibly 11. I luckily have a double oven. I also have parsnips and carrots to think about. My head is going to explode!

You can peel and parboil them the day before if that helps....I cooked for 11 last year. I said never again! I cut up the potatoes smaller so they were crunchier and people thought they had more than they did!

Just boil the potatoes for 5 min and drain them. They will be fine for days.

You can also partly roast them, when completely cold store in poly bags in fridge for two to three days, or freeze. Then just complete the cooking for about half an hour on the day.

Do you put spuds into already boiling water or cold and then bring to boil?

Put them in cold water then bring it to the boil, they will cook more evenly doing it that way. As a general rule, root veg goes into cold water, anything else goes into boiling water.
