Will a meatloaf or rissoles stay together using soya mince?

DH doesn't like nutloaf ( I've never tried it) and I'm sick of using a Quorn chicken roll with the roast.

I would love a meatloaf or rissoles ( meatloaf in balls and in breadcrumbs fried ) with our Xmas roast this year.

I have never used soya mince as we have always used Quorn mince. I once attempted to make hamburgers with Quorn mince which was a collapsed disaster.

Does soya mince have more sticking power like regular mince meat or will it fall apart like Quorn mince?

wheatandtwoveg.blogspot.co.uk/2012/02/vegetarian-meat-loaf.html This seems to suggest it does but you do need to use a binder like eggs. Did you use eggs before when you made hamburgers?

Thank you for the link. I did use eggs with the hamburger, yes.

Honestly, either soya or quorn mince are rubbish at this. I'd try something with pulses instead. Egg & breadcrumbs to hold it together.

There's a jack monroe thing with aubergines that works quite well.

I was about to say to add an egg and fresh breadcrumbs too.
Blend them together and you'll get a finer texture which will hold together. Add some chopped/grated and cooked veg for extra texture and flavour. This veggie chorizo recipe might help with quantities.

Alternatively, you can defrost your preferred veggie burgers/sausages, blend and reform them with extra herbs etc.

Thanks Crowy and OnyK. I'll experiment with blending veggie burgers ( I really like that idea ) if it still falls apart. I will look at something with chickpeas and lentils.

Try pulses of some sort, with silken tofu as a binder. Works well for burger type patties.

User1987654 · 10/12/2016 16:44

I didn't think of tofu. That would be perfect.

Make sure you get the silken type, the harder ones would cause even more problems!!

Will do :)

You can get a turkey roast from HERE we like the celebration roast which comes with pigs in blankets too

Linda McCartney makes a nice frozen roast too, it's totally different to quorn, more of a nut roast but without nuts (I don't eat nuts so don't like nut roast) I've not seen it this year but I haven't really looked
