Make ahead mainly vegetarian brunch recipes?

Planning a brunch for 8 (inc two pre-schoolers, and 5 vegetarians)

Won't have much time on the morning before they arrive, so wondering what I can prepare or make in advance then just reheat or assemble on the day?

I'd do a pan of Huevos rancheros with warm tortillas and a pan of garlicky Stilton mushrooms to serve on toasted sourdough. Maybe some bagels and cream cheese if you think the little ones wouldn't go for the former. Or maybe lots of fluffy American pancakes which could be served with the garlic mushrooms or sweet toppings (maple syrup, caramelised bananas, fresh berry compote etc). Maybe some chocolate and pecan twists if you want another sweet element.

Mini pasties (cheese and onion for veggies, spicy sausage meat for others)
Couscous
Olives
Pasta salad
Chicken wraps with halloumi for the veggies

All can be made day before

This is interesting - I've always thought of brunch as a bigger than normal breakfast, but most of these suggestions are for things I'd have for lunch. Is that what most people expect for brunch, do you think? I was planning on making breaskfqst stuff....

I'm with you op. Some of these suggestions are bizarre for brunch. Quiche did make me chuckle and pasta salad Grin

Pain au chocolates, pain au raisins, Danish pastries etc are easily pre-bought and warmed in the oven.

Jugs of juice

Prep eggs ready for quickly scrambling once guests have arrived

Sourdough bread to toast

Avocado

Cooked mushrooms (do in advance and heat once guests arrive)

Hash browns

Pancakes (prep in advance and then reheat)

Fruit/fruit salad

Yoghurt with optional toppings of honey, nuts and seeds.

Granola

Maybe some sausages that can be cooked in the oven- veggie and non-veggie. Chuck some bacon in with the non-veggies.

Plenty of bread for toasting, butter, ham and spreads.

Ooh bagels as suggested by previous poster is a good one. If you lay things out and people can help themselves they can choose to put on smoked salmon or avocado or a fried egg.

I think some folks may have read lunch instead of brunch.

I thought my suggestions were a combination of breakfast and lunch so that would be brunch! So for breakfast you may have mushrooms on toast but maybe Stilton are garlic mushrooms for lunch so I combine the two! Huevos ranchos is Mexican breakfast food but has a few elements we eat more typically for lunch. Bagels, pancakes and pastries well they're just delicious so you can eat them whenever you like!
But I do agree I would be really surprised to go to brunch and be dished up quiche and pasta salad, I'd think they were just serving lunch early!
