Ideas for veg heavy meals?

I'm trying to change my diet as I eat barely any fruit or veg and I'm feeling pretty crappy. I'd like to make some meals where the veg isn't just boiled or steamed and plonked on the side so anything like curries etc but as many portions of veg as possible.

Any ideas gratefully received - particularly recipes people have actually tried and found to be tasty :)

I love veg, occasionally eat meat but rarely enjoy it as much as a veg based dish. These are all good recipes

Vegetable chilli with beans (no meat). I tend to chuck in courgettes, carrots, sugar snap peas, peppers, chillies, onions, a tin of tomatoes and a tin of mixed beans, tomato purée to thicken it all. All your five a day in one meal there :) particularly nice with tortilla crisps I find!

Ratatouille, veggie curry, stir fry, pasta sauce made with mushrooms, peppers, tomatoes etc. Bean chilli. Roasted veg with sausages, casseroles etc.

I made a really nice potato, cauliflower and chickpea curry this week, loosely based on a Jamie Oliver recipe:

For 4:

Peel two large non-floury potatoes and cut into smallish pieces (as if you were doing roast potatoes). Wash and cut up a small cauliflower (or half a large cauliflower) into florets and keep some of the tender pale green inner leaves. Rinse a tin of chick peas.

Fry a large chopped onion in a little sunflower oil. After it is starting to cook and going transluscent add some grated fresh ginger (about 2-3tsp). Fry that for a few minutes, then add 1 large or 2 small cloves of garlic crushed or grated. Fry until garlic is browning (about 1-2 mins). Add knob of butter to the pan and melt. Add 1 tsp cumin, 1 tsp ground coriander, 1 tsp dried chilli flakes, 1 tsp turmeric and fry those all around in the onion/ginger/garlic for a minute or two. Put in the potatoes and enough vegetable stock to cover. Cover pan and simmer. When potatoes have been cooking for about 10/15 minutes, add cauliflower, cauliflower leaves and chick peas. When they are all cooked until very nearly soft (test with pointed knife) add 1 tsp garama masala and stir through and cook for further 5 minutes. You could stir through chopped baby spinach and/or coriander at this stage too.

Serve with yogurt or raita and plain rice.

One of our favourite super-easy midweek suppers is roast Mediterranean veg - whatever you fancy - with goats cheese and really good bread.

And soup. Lentil and ham my current fave - tiny amount of ham and you can chuck in lots of veg.

I used to live on very veg heavy omelettes, fill the pan with whatever chopped veg (usually courgettes peppers aubergine onion kale but really any veg) season well cook for a while then pour beaten eggs over then put the whole thing under the grill, serve on a lovely pile of raw spinach and mushrooms with some avocado.

Have tried replicating this simple meal with tofu instead of eggs but it's more tofu scramble than omelette.

Veggie cottage pie, stir fries, salads, soups, stews. Make your own pasta sauce with lots of different veg through it.

You can even bake the whole omelette without pre cooking any veg, just fill slightly oily casserole dish with veg and pour eggs over (add Parmesan?) and bake. In an emergency of fatigue and hunger I have cracked whole eggs into little foil trays of pre prepped veg and baked it like that.

Sorry not to be able to think of non egg things.

Chicken tray bake type things are good. Get a selection of veg ( root veg, potatoes, peppers, tomatoes,o onions, garlic, courgette, squash. Whatever you fancy but not leafy veg). Cut into chunks toss with chicken, bit of oil, herbs and spices of your choice. Maybe a splash of wine. Spread out on a baking tray / roasting tin and bung in the oven. You can even include fruit, orange or apple quartets, prunes, dried apricots. The permutations are endless.
