How to cook fresh fish

I am cooking fresh fish - cod to be exact, for the first time... honest!!

What is the best way to cook it. My Mum just said to make sure i don't over-cook it. But is it best in the oven, on the hob, micowave..?

I like it pan-fried best

Get some flour, grind salt and pepper into it and grate some lemon zest into it too. Dip the fish in it (both sides). Shallow fry in olive oil until golden brown on each side and as your mum says don't over cook it!

Serve with lemon wedges, french beans or salad and new potatoes.

If its your first time I would make a foil parcel by laying out a sheet of foil - grease with olive oil - lay the fish on it and squeeze on some olive oil, season with salt and pepper - fold in the foil edges at least 2 turns on each side to make a parcel then cook in the oven for about 20 mins at 180c.

This makes sure the fish stays moist and collects all the lovely juices, I would serve with new boiled potatoes and some steamed broccoli and carrots, you can even put this in the parcel with the fish if you want to.

for another idea cover in breadcrumbs mixed with lemon, parsley, parmesan, salt and pepper. Cook in oven in a small ovenproof dish for about 20 mins
